I meant to use it for Luke&#8217;s breakfast this morning but I forgot so I scoured the cookbooks today and came across this recipe. Luke is still in the induction week so I just left out the tortilla and served it as a salad.<\/p>\n<figure id=\"attachment_1076\" aria-describedby=\"caption-attachment-1076\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1076\" rel=\"attachment wp-att-1076\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1076\" title=\"Low Carb Black Bean Tostada\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5926-1024x794.jpg\" alt=\"Low Carb Black Bean Tostada\" width=\"640\" height=\"496\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5926-1024x794.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5926-300x232.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5926.jpg 1542w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1076\" class=\"wp-caption-text\">Low Carb Black Bean Tostada<\/figcaption><\/figure>\n<p><strong>Sauce:<\/strong><br \/>\n1\/4 cup Sour Cream &lt;&#8212;I use Plain Greek Style Yogurt<br \/>\n2 Tablespoons fresh Cilantro, chopped<br \/>\n1 Tablespoon Lime Juice<br \/>\n2 teaspoons Water<br \/>\n1\/4 &#8211; 1\/2 \u00a0teaspoon Tabasco sauce<br \/>\nSalt and Pepper, to taste<\/p>\n<p><strong>Tostadas:<\/strong><br \/>\n4 low carb Tortillas, any flavour<br \/>\n1 Tablespoon Olive Oil<br \/>\n1 teaspoon Chili Powder<br \/>\n1 teaspoon Ground Cumin<br \/>\n2 cups Greens: Iceberg Lettuce, Spinach Leaves, Red Lettuce, Romaine<br \/>\n3\/4 cup Black Beans, rinsed and drained<br \/>\n4 ounces Havarti Cheese<br \/>\n1 small Tomato, diced<br \/>\n2 Green Onions, sliced<br \/>\n1\/3 cup each, diced Red, Green, Orange Pepper<br \/>\n1\/2 Avocado, peeled and diced<br \/>\nBlack Olives, to garnish<\/p>\n<p><strong>Sauce:<\/strong><br \/>\nIn a bowl, combine ingredients; set aside.<\/p>\n<p><strong>Tostadas:<\/strong><br \/>\nHeat oven to 400F.<br \/>\nBrush tortillas on both side with olive oil and place on a cookie sheet.<br \/>\nSprinkle with chili powder; bake for 10 minutes or until browned in spots.<br \/>\nIn a large bowl, toss lettuce, beans, cheese, tomato, peppers and green onions.<br \/>\nPlace tortillas on plates, top with salad and drizzle with sauce.<br \/>\nGarnish with sliced black olives and avocado.<\/p>\n<p>Serves 4<\/p>\n<p>Just a note: I didn&#8217;t use the tortillas so I sprinkled the ground cumin and chili powder in with the salad greens.<\/p>\n<p><span style=\"color: #0000ff;\">&#8220;Black Bean Tostadas&#8221; Recipe. <span style=\"text-decoration: underline;\">Atkins The Complete Cookbook<\/span>,\u00a0New York, New York, Time Inc.
