Turns out they make pretty nifty bases for pizzas. Admittedly, the husband and I were not all that keen on the texture of the eggplant but it did do a fine job of holding the pizza toppings we so love. Nice work, Eggplant!<\/p>\n<figure id=\"attachment_1086\" aria-describedby=\"caption-attachment-1086\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1086\" rel=\"attachment wp-att-1086\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1086\" title=\"Low Carb Mini Eggplant Pizzas\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5942-1024x768.jpg\" alt=\"Low Carb Mini Eggplant Pizzas\" width=\"640\" height=\"480\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5942-1024x768.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5942-300x224.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1086\" class=\"wp-caption-text\">Low Carb Mini Eggplant Pizzas<\/figcaption><\/figure>\n<p>1 Eggplant, cut into thick slices<br \/>\nOlive Oil<br \/>\nSalt &amp; Pepper<\/p>\n<p>1\/2 Onion, sliced into thin strips<br \/>\n4 Mushrooms, halved and sliced<br \/>\n1\/2 each Green and Red Pepper, cut into strips<br \/>\nOregano<br \/>\nBasil<br \/>\nGarlic Powder<br \/>\n3\/4 cup Mozzarella Cheese, shredded<br \/>\n1\/4 cup Bacon Bits<\/p>\n<p>Place eggplant slices in a single layer on baking tray lined with parchment paper.<br \/>\nSprinkle with salt and let sit for 20 minutes;\u00a0Rinse and pat dry.<br \/>\nPreheat oven to 425F.<br \/>\nWipe off parchment paper; brush one side of each eggplant slice, season lightly with salt and pepper, then place on lined baking tray.<br \/>\nBrush second side of eggplant slices, sprinkle lightly with salt and pepper.<br \/>\nBake in preheated oven, for about 8 minutes, 4 mins per side.<br \/>\nWhile eggplant is in the oven, pan fry onion, mushrooms and pepper strips.<br \/>\nRemove eggplant slices from oven, top with prepared toppings.<br \/>\nSprinkle with oregano, basil and garlic powder.<br \/>\nSprinkle with cheese and bacon bits and return to oven.<br \/>\nBake for 5 &#8211; 7 minutes, until cheese is melted.<\/p>\n<p>Serve hot.<\/p>\n<p>* I didn&#8217;t use the oregano, basil or garlic powder; I have this mix of herbs and spices that I \u00a0keep on hand for topping pizzas, add into herb biscuits and sprinkle over pizza bread.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I had an eggplant in the fridge because I thought I should learn how to cook one!
