{"id":1198,"date":"2012-03-30T04:01:56","date_gmt":"2012-03-30T04:01:56","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=1198"},"modified":"2014-03-02T09:22:24","modified_gmt":"2014-03-02T17:22:24","slug":"cinnamon-roll-pancakes","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=1198","title":{"rendered":"Cinnamon Roll Pancakes"},"content":{"rendered":"<p>Late last year I came across\u00a0<a href=\"http:\/\/www.recipegirl.com\/2011\/03\/01\/cinnamon-roll-pancakes\/\" target=\"_blank\">Cinnamon Roll Pancakes<\/a>\u00a0at\u00a0<a href=\"http:\/\/www.recipegirl.com\/\" target=\"_blank\">Recipe girl<\/a> and immediately fell in love with the idea of morphing cinnamon rolls and pancakes together to create a super special brunch treat! I usually make a triple batch! The leftover ones are just as yummy as the fresh off the griddle ones. I would even go so far as to say they are better because the flavours have had a chance to meld and the brown sugar swirl has hardened as it cooled. Yummers!<\/p>\n<p>Yes, they are a bit of work to prepare but well worth the effort. So brew yourself a cup of coffee, gather your ingredients and do it! Start by preparing the Brown Sugar\/Cinnamon mixture, make the Cream Cheese Frosting and finally the Pancake Batter. Now I suppose you could cheat and use store bought Pancake mix, but why would you want to do that when whipping up Pancake Batter is so easy to do?<\/p>\n<p>Alright, get ready to make Cinnamon Roll Pancakes!<\/p>\n<figure id=\"attachment_1200\" aria-describedby=\"caption-attachment-1200\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1200\" rel=\"attachment wp-att-1200\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1200\" title=\"Cinnamon Roll Pancakes\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cinnamon-Roll-Pancakes-1024x928.jpg\" alt=\"Cinnamon Roll Pancakes\" width=\"640\" height=\"580\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cinnamon-Roll-Pancakes-1024x928.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Cinnamon-Roll-Pancakes-300x271.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1200\" class=\"wp-caption-text\">A Scrumptious Brunch Cinnamon Roll Pancake<\/figcaption><\/figure>\n<p><strong>Brown Sugar Cinnamon Mixture:<\/strong><br \/>\n1\/4 cup Butter, melted<br \/>\n1\/4 cup Brown Sugar<br \/>\n1 1\/2 teaspoons Ground Cinnamon<\/p>\n<p><strong>Cream Cheese Glaze:<\/strong><br \/>\n1\/4 cup Butter, softened<br \/>\n2 ounces Cream Cheese, slightly softened<br \/>\n3\/4 &#8211; 1 cup Icing Sugar<br \/>\n1\/2 teaspoon Vanilla<\/p>\n<p><strong>Pancake Batter:<\/strong><br \/>\n3 cups Flour<br \/>\n2 Tablespoons Baking Powder<br \/>\n1 teaspoon Salt<br \/>\n3 Tablespoons Sugar<br \/>\n1 1\/2 teaspoons Vanilla<br \/>\n2 1\/2 &#8211; 3 cups Milk<br \/>\n3 large Eggs, lightly beaten<br \/>\n1\/2 cup melted Butter<\/p>\n<p><strong>Brown Sugar Cinnamon Mixture:<\/strong><br \/>\nMelt butter in small mixing bowl; add brown sugar and cinnamon and stir well to combine.<br \/>\nPour the mixture into a Piping Bag or a small Ziploc Freezer Bag. (I fasten the end of my piping bag with a small clip, prop the bag in a drinking glass, fill the bag then put the whole thing into the fridge to bring the mixture back to a semi solid paste)<\/p>\n<p><strong>Cream Cheese Glaze:<\/strong><br \/>\nIn small mixing bowl cream together the softened butter and cream cheese until no lumps remain.<br \/>\nAdd icing sugar and vanilla, stirring well.<br \/>\nSpoon the Cream Cheese frosting into a second Piping Bag or small Ziploc Freezer Bag. (Again, I secure the tip while I load the piping bag and leave it sit in another drinking glass until I am ready to use it)<\/p>\n<p><strong>Pancake Batter:<br \/>\n<\/strong>In medium mixing bowl combine flour, baking powder, salt and sugar; make a well in the centre.<br \/>\nIn large pyrex measuring cup, melt butter; add 1 cup of the milk then stir in eggs, one at a time, stirring well after each addition.<br \/>\nPour the egg mixture into the dry ingredients, add another 1 1\/2 cups milk along with the vanilla and whisk together until well combined; add enough milk to right consistency. \u00a0A\u00a0few lumps may remain.<\/p>\n<p>Now we are ready to cook the Pancakes!<\/p>\n<figure id=\"attachment_1201\" aria-describedby=\"caption-attachment-1201\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1201\" rel=\"attachment wp-att-1201\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1201\" title=\"Cooking Cin Roll Pancakes\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cooking-Cin-Roll-Pancakes-1024x435.jpg\" alt=\"Cooking Cin Roll Pancakes\" width=\"640\" height=\"271\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cooking-Cin-Roll-Pancakes-1024x435.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Cooking-Cin-Roll-Pancakes-300x127.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1201\" class=\"wp-caption-text\">Cooking Cin Roll Pancakes<\/figcaption><\/figure>\n<p>Heat a large non stick griddle to 350F. and lightly spray with vegetable oil spray.<br \/>\nScoop about 1\/3 cup of batter for each pancake onto the hot griddle, lightly spreading each portion evenly.<br \/>\nWhen pancakes begin to bubble pipe the Brown Sugar\/Cinnamon mixture onto each pancake and continue cooking pancakes until the bubbles begin to pop.<br \/>\nCarefully slide a wide spatula underneath the pancake and flip over; cook for another 2 &#8211; 3 minutes, until golden.<br \/>\nFlip the pancakes onto a plate.<br \/>\nServe each pancake with a drizzle of cream cheese frosting.<\/p>\n<p>Recipe girl tells you to wipe out the pan between batches but I don&#8217;t do that. I did it the first time I tried the recipe and found it just made a mess so I just scoop more batter onto the griddle after I remove a batch. The griddle does get messing, as does the spatula but both clean up very easily. Once finished cooking I pour a enough water to coat the griddle, stick the spatula in HOT water to melt the sugar off. Works like a charm every time!
