I had a difficult time pulling together a dinner tonight! Thank goodness my mother cooked up a huge salmon yesterday and sent some home with us.<br \/>\nThe men said that they loved the Salmon Pot Pie!<\/p>\n<figure id=\"attachment_1323\" aria-describedby=\"caption-attachment-1323\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1323\" rel=\"attachment wp-att-1323\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1323\" title=\"Salmon Pot Pie\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Salmon-Pot-Pie.jpg\" alt=\"Salmon Pot Pie\" width=\"640\" height=\"320\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Salmon-Pot-Pie.jpg 640w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Salmon-Pot-Pie-300x150.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1323\" class=\"wp-caption-text\">Salmon Pot Pie<\/figcaption><\/figure>\n<p>While sweet potatoes were cooking I pan fried an onion until softened, added about a half cup of cream cheese, the same amount of mayonnaise, stirring until it all melty. Added some salt, pepper, a bit of lemon juice, some dill (think I could have added a bit more of that) then stirred in about 1 lb of baked salmon.<br \/>\nI poured all of that into a 2l casserole dish, lightly sprayed with vegetable oil spray, topped the salmon layer with fresh spinach.<br \/>\nDrained cooked sweet potatoes, mashed them with a potato masher and smoothed over the salmon and spinach, tucking all bits of spinach under the mashed sweet potatoes.<br \/>\nSmoothed out the top, into a preheated 375F oven for 30 minutes.<br \/>\nDone deal.<\/p>\n<p>1 kg Sweet Potato<\/p>\n<p>1 Onion, chopped<br \/>\n1\/2 cup Cream Cheese<br \/>\n1\/2 cup Mayonnaise<br \/>\nS &amp;P<br \/>\nDill, to your liking<br \/>\n500gm Baked Salmon or Canned Salmon<\/p>\n<p>3 cups fresh Spinach<br \/>\n&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It is time to go grocery shopping!
