This version of cheesecake is inspired by one I found in a Canadian Living magazine.<\/p>\n<figure id=\"attachment_1389\" aria-describedby=\"caption-attachment-1389\" style=\"width: 183px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1389\" rel=\"attachment wp-att-1389\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1389\" title=\"Ultimate Cheesecake\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_1686.jpg\" alt=\"\" width=\"183\" height=\"263\" \/><\/a><figcaption id=\"caption-attachment-1389\" class=\"wp-caption-text\">Ultimate Cheesecake - Add Topping of your choice<\/figcaption><\/figure>\n<p><strong>Crust<\/strong><br \/>\n1 1\/2 cups Cookie Crumbs; Chocolate, Arrowroot, Gingersnaps, Vanilla<br \/>\n1\/4 cup sugar, give or take, depending on what kind of cookie crumbs you use<br \/>\n2 Tbsp Honey if using Arrowroot, Vanilla or Gingersnap cookie crumbs<br \/>\n1\/4 cup Butter, melted<\/p>\n<p><strong>Cheesecake<\/strong><br \/>\n2 (250g) pkgs cream cheese, softened<br \/>\n3\/4 cup Sugar<br \/>\n2 Eggs<br \/>\n1 Tbsp Lemon Juice<br \/>\n2 tsp Vanilla<br \/>\n1\/4 teaspoon Salt<br \/>\n2 cups Sour Cream<\/p>\n<p>Topping of your choice: Strawberry, Blueberry, Raspberry, Cherry, Apple Crumble<\/p>\n<p><strong>Crust:<\/strong><br \/>\nPreheat oven to 325F.<br \/>\nIn small mixing bowl, combine cookie crumbs, sugar and melted butter.<br \/>\nPress into 9&#8243; Springform pan.<br \/>\nPlace springform pan onto a large square of foil; press foil up sides of pan, rendering springform pan watertight.<br \/>\nBake in 325F oven for 8 to 10 minutes.<br \/>\nCool.<\/p>\n<p><strong>Cheesecake:<\/strong><br \/>\nIn large mixing bowl, on low speed, beat cream cheese just until no lumps remain.<br \/>\nGradually add sugar.<br \/>\nAdd eggs, one at a time.<br \/>\nGradually beat in lemon juice, vanilla, salt and sour cream; beat on low speed for a few minutes.<br \/>\nPour into prepared crust.<\/p>\n<p>Set foil covered springform pan in a larger pan<br \/>\nPour in enough hot water to come 1&#8243; up the side of the springfrom pan.<br \/>\nBake in the centre of a 325F oven and bake for 60 minutes or until no longer shiny and edge is set. The middle may appear to still be a bit jiggly.<br \/>\nRun knife around edge of cheesecake.<br \/>\nCool cheesecake for an hour in turned off oven, with door ajar.<br \/>\nRemove cheesecake from bain marie and cool completely on wire rack.<br \/>\nCover with plastic wrap and refrigerate.<\/p>\n<p>To serve, remove side of pan, top with fruit topping of your choice and a dollop of whipped cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cheesecakes take a little extra work to make but are so worth the effort.
