The smell of Pineapple Upside Down Cake followed by the sight and taste of it is like a trip down memory lane! Not that we had it often when I was growing up, but what a special treat!<\/p>\n<figure id=\"attachment_1409\" aria-describedby=\"caption-attachment-1409\" style=\"width: 322px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1409\" rel=\"attachment wp-att-1409\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1409\" title=\"Pineapple Upside Down Cake\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Pineapple-Upside-Down-Cake.jpg\" alt=\"\" width=\"322\" height=\"157\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Pineapple-Upside-Down-Cake.jpg 322w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Pineapple-Upside-Down-Cake-300x146.jpg 300w\" sizes=\"auto, (max-width: 322px) 100vw, 322px\" \/><\/a><figcaption id=\"caption-attachment-1409\" class=\"wp-caption-text\">Pineapple Upside Down Cake<\/figcaption><\/figure>\n<p>1 (420g) can Sliced Pineapple, drained, reserving the juice<br \/>\n1\/4 cup Butter, melted<br \/>\n3\/4 cup Brown Sugar<br \/>\nMaraschino Cherries (optional)<\/p>\n<p>2 3\/4 cups Flour<br \/>\n4 teaspoons Baking Powder<br \/>\n1 teaspoon Salt<\/p>\n<p>1 cup Butter<br \/>\n1 1\/2 cup Sugar<br \/>\n2 Eggs<br \/>\n1 1\/2 teaspoon Vanilla<\/p>\n<p>1 1\/3 cup Juice (from reserved juice and enough water added to measure 1 1\/3 cup)<\/p>\n<p>Lightly spray a 9x13inch pan with Vegetable Oil Spray.<br \/>\nPreheat oven to 350F (175C)<br \/>\nDrain Pineapple, reserving liquid.<\/p>\n<p>Pour melted butter into prepared pan; sprinkle with brown sugar.<br \/>\nArrange pineapple slices over butter\/brown sugar mixture.<br \/>\nPlace a cherry in the center of each ring.<\/p>\n<p>In small mixing bowl, combine flour, baking powder and salt; set aside.<\/p>\n<p>In mixing bowl, cream butter and sugar until light and fluffy.<br \/>\nAdd eggs, one at a time, beating well after each addition.<br \/>\nAdd vanilla and beat for one minute.<br \/>\nAdd flour alternately with pineapple juice, beginning and ending with dry ingredients.<br \/>\nEvenly spread batter over pineapple rings.<br \/>\nBake in 350F (175C) oven for 40 minutes or until pick inserted in center comes out clean.<br \/>\nCool in pan for 5 minutes, the turn out.<\/p>\n<p>Serve warm with a scoop of Vanilla Ice cream or a dollop of Whipped Cream.<\/p>\n<p>Variation:<br \/>\nFruit Cocktail Upside Down Cake: Substitute a can of Fruit Cocktail for the Pineapple.
