I have been meaning to make some kind of recipe with honey in it for ages and only just got around to it this weekend. Doesn&#8217;t hurt that I just bought a copious amount of honey at Costco and also had two containers of honey with dregs that needed to be finished.<\/div>\n<div>Now I know the Honey Cake looks pretty with the Honeyed Almonds on top but in hindsight, the topping was a bad idea. Tasty, but a bad idea because the Honeyed Almonds was pretty much Almond Bark minus the chocolate. Again, tasty, but a bad idea for the top of a cake.<\/div>\n<div>\n<figure id=\"attachment_1579\" aria-describedby=\"caption-attachment-1579\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1579\" rel=\"attachment wp-att-1579\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1579\" title=\"Honey Cake with Honeyed Almonds\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake-300x225.jpg\" alt=\"Honey Cake with Honeyed Almonds\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-1579\" class=\"wp-caption-text\">Honey Cake with Honeyed Almonds<\/figcaption><\/figure>\n<p>3 1\/2 cups Flour<br \/>\n1 1\/2 teaspoons Baking Powder<br \/>\n1 teaspoon Baking Soda<br \/>\n1\/2 teaspoon Salt<br \/>\n1 Tablespoon ground Cinnamon<br \/>\n1\/2 teaspoon each: ground Cloves, ground Allspice, ground Ginger<br \/>\n1 cup Vegetable Oil<br \/>\n1 cup Honey<br \/>\n1 1\/2 cups Sugar<br \/>\n1\/2 cup Brown Sugar, lightly packed<br \/>\n3 large Eggs, at room temperature<br \/>\n1 1\/2 teaspoons Vanilla<br \/>\n1 cup warm Strong Coffee<br \/>\n1\/2 cup Orange Juice<br \/>\n1\/4 cup Rum<br \/>\n1\/2 cup slivered or sliced Almonds<\/p>\n<p>Preheat oven to 350F.<br \/>\nSpray a bundt pan and a 9&#8243;round cake pan with vegetable oil spray and dust with flour; gently tap out excess flour.<\/p>\n<p>In mixing bowl whisk together flour, baking powder, baking soda, salt, and spices; make a well in the centre.<br \/>\nIn a small mixing bowl combine oil, honey, sugars, eggs, vanilla, coffee, orange juice and rum.<br \/>\nPour liquid ingredients into the well in dry ingredients, and mix on low speed for 1 minute then increase to medium speed and mix for another 3 minutes.<br \/>\nPour batter into prepared pans.<br \/>\nBake in preheated oven for 60 &#8211; 75 minutes for the Bundt pan, 30 &#8211; 45 minutes for 9&#8243; round cake pan or until pick inserted comes out clean.<br \/>\nRemove from oven to wire rack and allow to cool in pan for 10 minutes.<br \/>\nRun knife around pan to loosen cake, turn out to cool completely on wire rack.<br \/>\nWhen cake is completely cooled, drizzle with glaze, top with toasted almonds and dust lightly with icing sugar.<\/p>\n<p>Serves: 12 &#8211; 16<\/p>\n<figure id=\"attachment_1581\" aria-describedby=\"caption-attachment-1581\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1581\" rel=\"attachment wp-att-1581\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1581\" title=\"Honey Cake with Honeyed Almonds\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake-with-Honeyed-Almonds-300x225.jpg\" alt=\"Honey Cake with Honeyed Almonds\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake-with-Honeyed-Almonds-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Honey-Cake-with-Honeyed-Almonds.jpg 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-1581\" class=\"wp-caption-text\">Honey Cake with Honeyed Almonds<\/figcaption><\/figure>\n<p>For original recipe head over to <a href=\"http:\/\/smittenkitchen.com\/blog\/2008\/09\/majestic-and-moist-honey-cake\/\" target=\"_blank\">Smitten Kitchen.<\/a><\/p>\n<p><span style=\"text-decoration: underline;\">Honeyed Almonds<\/span><br \/>\n<span style=\"text-decoration: underline;\"><br \/>\n<\/span>1\/4 cup Honey<br \/>\n2 Tablespoons Sugar<br \/>\n1 Tablespoon Butter<br \/>\n1\/2 teaspoon ground Cinnamon<br \/>\n1 &#8211; 1 1\/2 cups Almonds<\/p>\n<p>Melt honey, sugar and butter in heavy skillet over medium heat.<br \/>\nStir in vanilla and almonds; continue cooking for about 5 minutes, stirring constantly, watching for the almonds to start turning golden brown.<br \/>\nRemove from heat and cool completely.<br \/>\nBreak into bite size chunks.<\/p>\n<p><span style=\"text-decoration: underline;\">What I did<\/span><br \/>\nI carefully spread the hot honeyed almonds on top of the cake and allowed it to cool completely before lightly dusting with icing sugar.<br \/>\nAgain, it was a bad idea as I basically had Almond Bark on the top of my cake.<\/p>\n<p>&nbsp;<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>My husband has a Honey fetish along with a life long dream of being a bee keeper.
