I decided to give Low Carb Sweets another look. And I will continue to do so for the rest of January 2013 just to see what I come up with and determine whether or not LC will fill the void.<\/p>\n<p>I entered Low Carb High Protein cookie recipes into google and had a browse through the first few hits. I liked the look of <a href=\"http:\/\/www.yummly.com\/recipe\/Healthy-No-Bake-Protein-Cookies-Food_com-109465?fb_action_ids=10151157766206148&amp;fb_action_types=og.likes&amp;fb_source=aggregation&amp;fb_aggregation_id=288381481237582\/\" target=\"_blank\">Healthy No Bake Protein Cookies<\/a> because I almost always have protein powder on hand these days, love peanut butter and always have dried cranberries, dates, raisins and a variety of nuts on hand.<\/p>\n<figure id=\"attachment_1620\" aria-describedby=\"caption-attachment-1620\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1620\" rel=\"attachment wp-att-1620\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1620\" alt=\"Low Carb High Protein Fruit and Nut Bites\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/LC-High-Protein-Bites-.jpg\" width=\"640\" height=\"293\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/LC-High-Protein-Bites-.jpg 640w, http:\/\/aysontespli.ca\/wp-content\/uploads\/LC-High-Protein-Bites--300x137.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/LC-High-Protein-Bites--624x285.jpg 624w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1620\" class=\"wp-caption-text\">Low Carb High Protein Fruit and Nut Bites<\/figcaption><\/figure>\n<p>How I made them:<\/p>\n<p>6 ounces Peanut Butter<br \/>\n2 ounces Tahini Paste<br \/>\n1\/3 cup Splenda Brown Sugar<br \/>\n1 1\/2 Scoops Vega One Protein Powder<br \/>\n1\/4 cup chopped Dates<br \/>\n1\/4 cup dried Cranberries<br \/>\n1\/4 cup Raisins<br \/>\n1\/2 cup Sliced Blanched Almonds<br \/>\nFine Coconut \u00a0&#8211; about 1 cup<\/p>\n<p>Melt the peanut butter and tahini paste over low heat until melted, stirring constantly to discourage scorching and eliminating all lumps.<br \/>\nRemove from heat and stir in protein powder and Splenda brown sugar.<br \/>\nStir in dates, cranberries, raisins and sliced almonds until well incorporated.<br \/>\nUse a #2 Pampered Chef scoop to scoop portion dough into even sized balls, roll between your hands to attain even form then drop into coconut and roll around to coat.<\/p>\n<p>Yield: About 24 cookies<\/p>\n<p><strong>What I would do different next time:<\/strong><br \/>\nI just happen to have Splenda Brown Sugar on hand&#8230;I almost threw it away but considering how much I paid for it, I thought I better use it up. When the Splenda BS is gone I will use Honey, but not the cup stated in the original recipe; I will probably use 1\/3 of a cup.<br \/>\nI will make them with all Peanut Butter; I have Tahini Paste in the pantry for when I make hummus but I don&#8217;t make it that often and hummus doesn&#8217;t call for much of it!
