{"id":171,"date":"2011-04-17T15:45:31","date_gmt":"2011-04-17T15:45:31","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=171"},"modified":"2011-04-17T15:46:16","modified_gmt":"2011-04-17T15:46:16","slug":"hot-cross-muffins","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=171","title":{"rendered":"Hot Cross Muffins"},"content":{"rendered":"<p>These yummy muffins borrow their flavour from Hot Cross Buns and are infinitely easier to make!<\/p>\n<figure id=\"attachment_172\" aria-describedby=\"caption-attachment-172\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a rel=\"attachment wp-att-172\" href=\"http:\/\/aysontespli.ca\/?attachment_id=172\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-172\" title=\"IMG_2688\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2688-300x253.jpg\" alt=\"Hot Cross Muffins\" width=\"300\" height=\"253\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2688-300x253.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2688.jpg 511w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-172\" class=\"wp-caption-text\">Sugar and Spice and Everything Nice!<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>2 cups Flour<br \/>\n1 teaspoon Baking Powder<br \/>\n1 teaspoon Baking Soda<br \/>\n3\/4 teaspoon Salt<br \/>\n1 teaspoon Cinnamon<br \/>\n1\/2 teaspoon Nutmeg<br \/>\n1\/2 teaspoon Cloves<br \/>\n1\/4 teaspoon Ginger<br \/>\n1\/2 cup Currants<br \/>\n1\/2 cup Glazed Mixed Fruit<\/p>\n<p>1\/2 cup Butter, softened<br \/>\n1\/2 cup Sugar<br \/>\n1\/4 cup Brown Sugar<br \/>\n1 Egg<br \/>\n1 cup Buttermilk<br \/>\n1 teaspoon Vanilla<br \/>\n1 1\/2 teaspoons Bundaberg Rum (or Captain Morgan&#8217;s Spicy Rum) (optional)<\/p>\n<p>Preheat oven to 400F.<br \/>\nLine 12 cup Muffin tin with paper liners.<\/p>\n<p>In large mixing bowl combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves and ginger; make a well in the centre.<br \/>\nStir in glazed mixed fruit and currants; set aside.<br \/>\nIn small mixing bowl, beat butter until smooth; add sugar and brown sugar \u00a0and stir until well blended.<br \/>\nAdd egg, vanilla.
