{"id":1733,"date":"2013-08-12T13:40:30","date_gmt":"2013-08-12T20:40:30","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=1733"},"modified":"2013-08-12T13:42:33","modified_gmt":"2013-08-12T20:42:33","slug":"lentil-loaf","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=1733","title":{"rendered":"Lentil Loaf"},"content":{"rendered":"<div>The Lentil Loaf recipe that I found eons ago in a Canadian Living magazine is a versatile staple in my Vegetarian lifestyle: sometimes I bake it in a loaf pan, make a Cashew Nut Sauce to go with it; sometimes I scoop the mixture into a muffin tin for single serving portions, wrap &#8217;em up, freeze &#8217;em and use &#8217;em when I need &#8217;em; and finally, my fave, I use it as a base for Shepherd&#8217;s Pie.<\/div>\n<div><\/div>\n<div><\/div>\n<div>\n<figure id=\"attachment_1734\" aria-describedby=\"caption-attachment-1734\" style=\"width: 625px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1734\" rel=\"attachment wp-att-1734\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1734\" alt=\"Versatile Lentil Loaf\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherds-Pie-with-Lentil-Loaf-872x1024.jpg\" width=\"625\" height=\"733\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherds-Pie-with-Lentil-Loaf-872x1024.jpg 872w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherds-Pie-with-Lentil-Loaf-255x300.jpg 255w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherds-Pie-with-Lentil-Loaf-624x731.jpg 624w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherds-Pie-with-Lentil-Loaf.jpg 2035w\" sizes=\"auto, (max-width: 625px) 100vw, 625px\" \/><\/a><figcaption id=\"caption-attachment-1734\" class=\"wp-caption-text\">Versatile Lentil Loaf<\/figcaption><\/figure>\n<div>4 Tablespoons Olive Oil<\/div>\n<div>1 Onion, chopped<\/div>\n<div>2 cloves Garlic, crushed<\/div>\n<div>1 1\/2 cups Red Lentils, washed and well drained<\/div>\n<div>3 cups Vegetable Broth<\/div>\n<div>2 Tablespoons Lemon Juice<\/div>\n<div>2\/3 cup Bread Crumbs<\/div>\n<div>1 Tomato, chopped<\/div>\n<div>2 + teaspoons Basil<\/div>\n<div>\n<div>1 teaspoon Salt<\/div>\n<div>1 Egg, lightly beaten (optional)<\/div>\n<div>1\/4 cup Water<\/div>\n<div><\/div>\n<div>5 &#8211; 6 potatoes<\/div>\n<p>&nbsp;<\/p>\n<div>Heat olive oil in a medium size saucepan with tight fitting lid.<br \/>\nCook onion in heated oil for 2 &#8211; 3 minutes; add garlic and continue cooking for another few minutes.<br \/>\nStir in lentils until coated.<br \/>\nAdd vegetable stock and bring to a boil.<br \/>\nReduce heat and simmer, covered for about 30 minutes until lentils are tender.<br \/>\nRemove from heat, stir well, mashing any whole lentils remaining.<br \/>\nStir in lemon juice, bread crumbs, tomatoes, basil and salt, water and egg, if using.<\/div>\n<div>If making Shepherd&#8217;s Pie, Cook potatoes now to make your favourite Mashed Potatoes<br \/>\nPreheat oven to 350F now.<\/div>\n<div>Prepare an 8x4inch loaf pan; spray lightly with vegetable oil spray.<br \/>\nor<br \/>\nPrepare Muffin tin; spray 12 large muffin cups with vegetable oil spray<\/div>\n<div>or<\/div>\n<div>Prepare 4 Ramekins: spray lightly with vegetable oil spray<\/div>\n<div><\/div>\n<div>Scoop Lentil Mixture into your baking dish(es)<br \/>\nIf making Shepherd&#8217;s Pie, top Lentil Mixture with a layer of Frozen Peas or Frozen Mixed Vegetables and top with Mashed Potatoes.<\/div>\n<div><\/div>\n<div>Bake in 350F:<\/div>\n<div>Loaf \u00a0&#8211; \u00a01 1\/2 hours, until knife inserted comes out clean<br \/>\nMuffin Tin \u00a0&#8211; \u00a040 &#8211; 45 minutes, until pick inserted comes out clean<\/div>\n<div>Shepherd&#8217;s Pie \u00a0&#8211; \u00a035 &#8211; 45 minutes, until Lentil layer is Bubbly and Potato topping is golden.<\/div>\n<div><\/div>\n<div>For an unconventional Shepherd&#8217;s Pie, coz my Aussie Husband dislikes Mashed Potatoes! (shakes head, who doesn&#8217;t like mashed potatoes??)<br \/>\nI parboiled some baby potatoes, drained, sliced and threw them onto a layer of Frozen Peas on top of the Lentil Mixture.
