{"id":1752,"date":"2013-09-16T12:55:07","date_gmt":"2013-09-16T19:55:07","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=1752"},"modified":"2013-09-16T12:57:09","modified_gmt":"2013-09-16T19:57:09","slug":"cashew-rice-pilaf","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=1752","title":{"rendered":"Cashew Rice Pilaf"},"content":{"rendered":"<p>This recipe came through my Facebook feed from <a href=\"http:\/\/www.budgetbytes.com\/2013\/09\/cashew-rice-pilaf\/\" target=\"&quot;_blank\">Budget Bytes<\/a> the other day and I thought I might have all the ingredients in my pantry; only had to make a few substitutions and have another on deck for the next time I make this.<br \/>\nNow maybe my pilaf fell a little flat because I used Basmati rice instead of Jasmine but I am more likely to have Basmati rice in the pantry over Jasmine so I will just make that work by adding a McCormick&#8217;s Vegetable Stock cube the next time I make it. Also, try as I might, I simply cannot grown a kitchen herb garden! Every time I buy fresh cilantro it goes off before I have a chance to use it so I just left it out. I threw in a bit of fresh chopped parsley (Because who can&#8217;t grow that stuff!?) which added lovely colour but not a whole lot of flavour.<\/p>\n<figure id=\"attachment_1753\" aria-describedby=\"caption-attachment-1753\" style=\"width: 612px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1753\" rel=\"attachment wp-att-1753\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1753\" alt=\"Cashew Rice Pilaf\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cashew-Rice-Pilaf.jpg\" width=\"612\" height=\"612\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Cashew-Rice-Pilaf.jpg 612w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Cashew-Rice-Pilaf-150x150.jpg 150w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Cashew-Rice-Pilaf-300x300.jpg 300w\" sizes=\"auto, (max-width: 612px) 100vw, 612px\" \/><\/a><figcaption id=\"caption-attachment-1753\" class=\"wp-caption-text\">Cashew Rice Pilaf<\/figcaption><\/figure>\n<p>2 Tablespoons Olive Oil<br \/>\n3 cloves Garlic, minced<br \/>\n1\/2 teaspoon Turmeric<br \/>\n1\/2 teaspoon Cumin<br \/>\n1\/4 teaspoon ground Cinnamon<br \/>\n2 cups Basmati Rice<br \/>\n1\/2 chopped Cashews<br \/>\n1\/4 cup dried Currants<br \/>\n3 cups Water<br \/>\n1 McCormick&#8217;s Vegetable Stock cube<br \/>\n1\/2 teaspoon Salt<br \/>\n1 Bay Leaf<br \/>\nA few sprigs Cilantro, chopped<\/p>\n<p>In a medium saucepan heat oil over medium heat.<br \/>\nCook onion for 2 minutes then stir in minced garlic, turmeric, cumin and cinnamon and continue cooking for another 2 minutes, stirring often.<br \/>\nAdd the rice, turn the heat up a notch; cook, stirring constantly for 2 minutes.<br \/>\nAdd the cashews, currants, water, vegetable stock cube, salt and bay leaf; stir to combine.<br \/>\nTurn the heat all the way up and bring the pot to a boil; reduce the heat as soon as it comes to a full boil, put the lid on and turn the heat down to low and simmer for 20 minutes.<br \/>\nRemove from heat and allow to sit for 15 minutes, with lid on.<br \/>\nRemove lid, fluff the rice with a fork.<br \/>\nGently stir in chopped cilantro.<br \/>\nServe hot.<\/p>\n<p>Serves 6<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe came through my Facebook feed from Budget Bytes the other day and I thought I might have all the ingredients in my pantry; only had to make a few substitutions and have another on deck for the next time I make this.
