I squeezed in a bag of pears prepped for jamming today but still had more pears left over than we are able to eat in a week. \u00a0I just made Apple Crisp the other day so Pear Crisp was out of the question. Hmmm? What to do with these pears? Oh! A Cobbler! I know it is practically the same as a Crisp but just different enough to make it seem like I wasn&#8217;t making the same thing twice in a matter of days.<\/p>\n<p>While my Pear Jam was jamming, I headed over to Canadian Living.com to search out a recipe for <a href=\"http:\/\/www.canadianliving.com\/food\/baking_and_desserts\/pear_cobbler.php\" target=\"_blank\">Pear Cobbler<\/a> and was not disappointed. Time was of the essence as I was in the zone and the jam only needed to jam for another 50 minutes. This cobbler was quick and easy to throw together; my one remorse was that I didn&#8217;t put my baking dish on a cookie sheet&#8230;.now I have to clean my oven&#8230;again!<br \/>\nOh, and I love how Canadian Living introduced the recipe&#8230;&#8221;<em>Harvest an orchardful of flavour with this old-fashioned cobbler.&#8221;<\/em><\/p>\n<figure id=\"attachment_1771\" aria-describedby=\"caption-attachment-1771\" style=\"width: 612px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1771\" rel=\"attachment wp-att-1771\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1771\" alt=\"Pear Cobbler\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Pear-Cobbler.jpg\" width=\"612\" height=\"612\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Pear-Cobbler.jpg 612w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Pear-Cobbler-150x150.jpg 150w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Pear-Cobbler-300x300.jpg 300w\" sizes=\"auto, (max-width: 612px) 100vw, 612px\" \/><\/a><figcaption id=\"caption-attachment-1771\" class=\"wp-caption-text\">Pear Cobbler<\/figcaption><\/figure>\n<p>7 cups Pears, peeled and sliced<br \/>\n1\/3 cup Brown Sugar, packed<br \/>\n1 Tablespoon Cornstarch<br \/>\n1 Tablespoon Lemon Juice<br \/>\npinch of Epicure Apple Pie Spice<br \/>\nBiscuit Topping<br \/>\n1 cup Flour<br \/>\n1\/4 cup Sugar<br \/>\n1 teaspoon Baking Powder<br \/>\n1\/4 teaspoon Baking Soda<br \/>\npinch of Salt<br \/>\n1\/4 Butter, cold and cut into cubes<br \/>\n3\/4 cup Buttermilk<\/p>\n<p>Preheat oven to 400F.<br \/>\nLightly spray an 8&#8243; Square Pyrex dish with vegetable oil spray.<\/p>\n<p>In a large bowl, gently toss pears with brown sugar, cornstarch, lemon juice and Apple Pie Spice.<br \/>\nTurn out into prepared baking dish.<br \/>\nIn a medium mixing bowl whisk together flour, sugar, baking powder, baking soda and salt.<br \/>\nUsing a pastry blender, or two knives, cut in butter until crumbly.<br \/>\nPour in buttermilk and stir with fork to form a soft, sticky dough.<br \/>\nDrop dough in 9 evenly spaced mounds over the fruit.<br \/>\nBake in 400F. for about 35 minutes or until bubbly and topping is light golden and no longer doughy underneath when lifted with spoon.<\/p>\n<p>Serves 6<\/p>\n","protected":false},"excerpt":{"rendered":"<p>My freezer is chockers with an abundance of summer fruits!
