I found this super <a href=\"http:\/\/www.vegetariantimes.com\/recipe\/quick-curried-vegetables\/\" target=\"_blank\">Quick Curried Vegetables<\/a> recipe at Vegetarian Times. \u00a0Of course I tweaked it according to what I had on hand and I am sure I will tweak it every time I make it&#8230;<\/p>\n<figure id=\"attachment_1808\" aria-describedby=\"caption-attachment-1808\" style=\"width: 625px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1808\" rel=\"attachment wp-att-1808\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1808\" alt=\"curried vegetables\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2902-1024x592.jpg\" width=\"625\" height=\"361\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2902-1024x592.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2902-300x173.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_2902-624x361.jpg 624w\" sizes=\"auto, (max-width: 625px) 100vw, 625px\" \/><\/a><figcaption id=\"caption-attachment-1808\" class=\"wp-caption-text\">Curried Vegetables<\/figcaption><\/figure>\n<p>2 teaspoons Olive Oil<br \/>\n1 large Onion, chopped<br \/>\n1 (400ml) can Coconut Milk<br \/>\n1 cup Water<br \/>\n1 McCormick Vegetable Stock Cube, crushed<br \/>\n3 Tablespoons Tomato Paste<br \/>\n3 Tablespoons Curry Powder<br \/>\n1 lb Red Skinned Potatoes, scrubbed and cut into 1&#8243; cubes &lt;- I used mini white\/red potatoes I had on hand<br \/>\n1 small Cauliflower, cut into small flowerets<br \/>\n2 heads Broccoli, cut into small flowerets<br \/>\n1\/2 cup frozen Peas<br \/>\n1\/4 cup fresh Cilantro, chopped<br \/>\n1 &#8211; 2 Tablespoons Lime Juice<\/p>\n<p>Heat oil in large saucepan over medium-high heat.<br \/>\nAdd onion and cook for 5 minutes, stirring frequently.<br \/>\nAdd coconut milk, water and vegetable stock cube; whisk in tomato paste and curry powder.<br \/>\nBring to a boil; add potatoes, reduce heat to medium, cover and cook for 15 minutes until potatoes are stiff firm but almost done.<br \/>\nStir in cauliflower, broccoli; cover and cook another 5 minutes, or until vegetables are tender.<br \/>\nRemove from heat; stir in frozen peas, cilantro and lime juice.<\/p>\n<p>Season to taste with salt and freshly ground pepper.<br \/>\nServe with Basmati Brown Rice.<\/p>\n<p>Serves: 6 &#8211; 8<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I make pretty good Dal, a good Red Curry that I sometimes do Vegetarian, sometimes with Chicken or Shrimp, killer Naan, decent Gobi Aluu but was lacking in the Curried Veg department; even my husband&#8217;s Granny made better curried veg than me&#8230;well, no more!
