I offer you a wonderful solution:<a href=\"http:\/\/www.food.com\/recipe\/shepherd-pie-with-leftover-roast-beef-and-potatoes-by-paula-deen-333047\/\" target=\"_blank\">Paula Deen&#8217;s Shepherd Pie with Leftover Roast Beef<\/a>\u00a0found over at <a href=\"http:\/\/www.food.com\/\" target=\"_blank\">Food.com<\/a>. I made a few changes&#8230;as I am known to do, so I have listed how I made it. My husband was thrilled that I even presented him with a lil serving of Ketchup to go with his portion. This Shepherd Pie reminded me of an Aussie Meat Pie which also begs for a good dollop of Ketchup.<\/p>\n<p>This Shepherd Pie is different from all the ones I have seen; it uses mashed potatoes for the &#8220;crust&#8221; and has a biscuit topping! I don&#8217;t EVER purchase <a href=\"http:\/\/aysontespli.ca\/?p=1851\/\" target=\"_blank\">Bisquick Baking Mix<\/a> but a few years ago I realized that someone MUST have posted home made versions of the stuff; I was right. I make up a batch of biscuit mix now and again and keep it in the fridge for when I am feeling particularly lazy and don&#8217;t want to make &#8217;em from scratch.<\/p>\n<p>I poured the goopy Biscuit dough on top of the meat filling as directed in the recipe but my son Ryan said next time I should scoop it on in mounds. I think he might be on to something with that suggestion.<\/p>\n<figure id=\"attachment_1849\" aria-describedby=\"caption-attachment-1849\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1849\" rel=\"attachment wp-att-1849\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1849\" alt=\"Shepherd Pie with Leftover Roast Beef\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherd-Pie-with-Leftover-Roast-Beef.jpg\" width=\"640\" height=\"640\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherd-Pie-with-Leftover-Roast-Beef.jpg 640w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherd-Pie-with-Leftover-Roast-Beef-150x150.jpg 150w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherd-Pie-with-Leftover-Roast-Beef-300x300.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Shepherd-Pie-with-Leftover-Roast-Beef-624x624.jpg 624w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-1849\" class=\"wp-caption-text\">Shepherd Pie with Leftover Roast Beef, Mashed Potato Crust and Biscuit Topping<\/figcaption><\/figure>\n<p>1 Onion, chopped<br \/>\n3 cloves Garlic, minced<br \/>\n2 Tablespoons Olive Oil<br \/>\n1 1\/2 pounds Leftover Roast Beef, cubed<br \/>\n3\/4 cup Gravy (use leftover Gravy if you have it; if not, stir 1 Tablespoon Gravy Mix into 3\/4 cup cold water, whisk until no lumps remain)<br \/>\n1 1\/2 teaspoons Worcestershire Sauce<br \/>\nSalt and Pepper<br \/>\n3 cups Mashed Potatoes, leftover<br \/>\n1 cup Frozen Sweet Peas<br \/>\n1\/2 cup diced Carrots<br \/>\n1 &#8211; 1 1\/2 cups Milk<br \/>\n2 cups Biscuit Mix<br \/>\n4 Tablespoons Butter, melted<\/p>\n<p>Preheat oven to 350F.<br \/>\nLightly spray a 9x9inch square pan with vegetable oil spray.<br \/>\n<span style=\"text-decoration: underline;\"><strong>Beef Layer:<\/strong><\/span><br \/>\nIn a large skillet over med-high heat saut\u00e9 onion in olive oil.<br \/>\nAdd minced garlic and continue saut\u00e9ing for another couple of minutes.<br \/>\nAdd beef, stir well.<br \/>\nAdd gravy and heat to boiling; cook for 1 &#8211; 2 minutes, stirring constantly.<br \/>\nRemove from heat.<br \/>\nAdd worcestershire sauce, \u00a0salt and pepper; set aside.<br \/>\n<span style=\"text-decoration: underline;\"><strong>&#8220;Crust&#8221;:<\/strong><\/span><br \/>\nLayer mashed potatoes halfway up the sides of prepared baking dish.<br \/>\nSpread beef mixture over mashed potatoes.<br \/>\nNext, add frozen sweet peas and diced carrots.<br \/>\n<span style=\"text-decoration: underline;\"><strong>Biscuit Topping:<\/strong><\/span><br \/>\nCombine biscuit topping mix with enough milk to make a goopy dough.<br \/>\nScoop biscuit dough and drop in mounds onto vegetable layer.<br \/>\nBrush with melted butter.<br \/>\nBake in preheated 350F oven for 35 &#8211; 45 minutes or until top is golden brown.<br \/>\nLet stand a few minutes before serving.<\/p>\n<p>Serve 4 &#8211; 6<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Alright so you made that roast beef, loads of mashed potatoes and now you have heaps of leftovers, right?
