{"id":1945,"date":"2014-01-15T09:52:07","date_gmt":"2014-01-15T17:52:07","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=1945"},"modified":"2014-01-15T10:06:00","modified_gmt":"2014-01-15T18:06:00","slug":"epicures-salsa-meatloaf","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=1945","title":{"rendered":"Meatless Salsa Meatloaf"},"content":{"rendered":"<p>I attended an Epicure presentation in the Summer of 2013; I bought a Starter set which included <a href=\"http:\/\/www.epicureselections.com\/en\/products\/food\/mexican-party\/1615\/poco-picante-salsa-mix\/\" target=\"_blank\">Poco Picante Salsa Mix<\/a>\u00a0and I have got to say, I use this stuff in a lot of things! First and foremost though, a sprinkle of this stuff in a bit of Plain Greek Yogurt is a great dip! But I digress.<br \/>\nI &#8220;Liked&#8221; Epicure Selections on Facebook and regularly get recipe ideas in my daily feed. The other day this <a href=\"http:\/\/www.epicureselections.com\/en\/recipe\/4189\/epicures-mini-meatless-mediterranean-meatloaves\/\" target=\"_blank\">Mini Meatless Mediterranean Meatloaf<\/a>\u00a0recipe came through my feed and since it was Meatless Monday, I thought I would give it a read. Of course I didn&#8217;t have <a target=\"_blank\"> Tzaziki Dip Mix<\/a>\u00a0in my pantry but it occurred to me that I had made a Mexican inspired Meatloaf in the past&#8230;<\/p>\n<p>The long and short of it is that I used my Salsa mix in the recipe and was very pleased with the results. Oh, also, I didn&#8217;t have a can of lentils in the pantry&#8230;who buys lentils in a can? So I cooked up a cup of red lentils with half a chopped onion, a couple of cloves of minced garlic and a McCormick&#8217;s Vegetable Stock cube&#8230;all worked out in the end. To complete the Mexican Flare, I topped it with the above mentioned plain yogurt\/Poco Picante Salsa Mix, a bit of chopped green pepper, tomato and red onion.<\/p>\n<p>Now I have to admit, this would be pretty challenging to accomplish without a Food Processor; challenging, but not impossible. You would be required to mash the beans and lentils the old fashioned way- with a potato masher; the almonds would have to be ground by hand using a chef&#8217;s knife and cutting board but hey! You would have had a great arm workout at the end of it all!<\/p>\n<p>Pretty delish if I do say so myself!<\/p>\n<figure id=\"attachment_1949\" aria-describedby=\"caption-attachment-1949\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1949\" rel=\"attachment wp-att-1949\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1949 \" alt=\"vegetarian, salsa, black beans, lentils\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03011-300x258.jpg\" width=\"300\" height=\"258\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03011-300x258.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03011-1024x881.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03011-624x537.jpg 624w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-1949\" class=\"wp-caption-text\">Lightly Spiced Salsa Meatless Meatloaf with Picante Topping<\/figcaption><\/figure>\n<p>1 can (540 ml) Black Beans, rinsed and drained<br \/>\n*1 can (540ml) Lentils, rinsed and drained<br \/>\n1 cup cooked White or Brown Rice<br \/>\n1\/2 cup Ground Almonds<br \/>\n1 Tablespoon Poco Picante Salsa Mix &lt;- when I run out, I will use Adobo Seasoning<br \/>\n1 Tablespoon Olive Oil<br \/>\n1 Tablespoon Lime Juice<\/p>\n<p>1 cup Plain Greek Yogurt<br \/>\n1 Tablespoon Picante Salsa Mix<br \/>\n2 strips of Green Pepper, diced<br \/>\n2 slices of Tomato, chopped<br \/>\n1\/16 of a Red Onion, chopped<\/p>\n<p>*if using dry lentils:<br \/>\n<span style=\"color: #666699;\">1 cup Lentils, rinsed and drained<\/span><br \/>\n<span style=\"color: #666699;\">2 cups water<\/span><br \/>\n<span style=\"color: #666699;\">1\/2 Onion, chopped<\/span><br \/>\n<span style=\"color: #666699;\">2 cloves Garlic, minced<\/span><br \/>\n<span style=\"color: #666699;\">1 McCormick&#8217;s Vegetable Stock cube<\/span><\/p>\n<p><span style=\"color: #666699;\">Bring lentils, water, chopped onion, minced garlic and vegetable stock cube to a boil; reduce heat, cover and simmer for 20 minutes, stirring occasionally.<\/span><\/p>\n<p>In a small bowl combine plain greek yogurt, salsa mix.<br \/>\nPlace in fridge and allow flavours to meld while preparing the meatless meatloaf.<br \/>\nChop\/dice green pepper, tomato and red onion; set aside.<\/p>\n<p>Preheat oven to 375F.<br \/>\nLightly spray an 8&#8243;x4&#8243; Loaf Pan; set aside.<br \/>\nOr lightly spray 6 4&#8243; Ramekins; set aside.<\/p>\n<p>In a food processor, pulse lentils and beans until coarsely chopped.<br \/>\nTurn into a medium mixing bowl and stir together with rice, ground almonds, Salsa Mix (or Adobo Seasoning), olive oil and lime juice.<br \/>\nTurn into prepared loaf pan.<br \/>\nBake until browned and crisp on top, about 30 minutes.<\/p>\n<p>Top a slice of Salsa Meatloaf with a dollop of the yogurt mixture and sprinkle with chopped veggies.<br \/>\nServe with a Green Salad.<\/p>\n<figure id=\"attachment_1950\" aria-describedby=\"caption-attachment-1950\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1950\" rel=\"attachment wp-att-1950\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1950\" alt=\"Salsa Meatless Meatloaf topped with Picante Topping\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03014-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03014-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03014-1024x768.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03014-624x468.jpg 624w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-1950\" class=\"wp-caption-text\">Salsa Meatless Meatloaf topped with Picante Topping<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I attended an Epicure presentation in the Summer of 2013; I bought a Starter set which included Poco Picante Salsa Mix\u00a0and I have got to say, I use this stuff in a lot of things!
