I was delighted when this recipe for <a>Easy as Tamale Pie<\/a> from <a target=\"_blank\"> Kitchen Meets Girl<\/a> came through <a target=\"_blank\"> Ay Sontespli&#8217;s Kitchen\u00a0<\/a>!<br \/>\nI used to make a Tamale Pie from a recipe that I found in one of those Canadian Living Mini Cookbooks that, for a limited time, you used to be able to get when you filled up at Petro Can&#8230;I have long since lost the cookbook, to my dismay; \u00a0I have tried a few times to make Tamale Pie from memory which meh, sort of worked? \u00a0Anyway, I do think my problem has been solved with the discovery of this recipe.<\/p>\n<figure id=\"attachment_1970\" aria-describedby=\"caption-attachment-1970\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1970\" rel=\"attachment wp-att-1970\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1970\" alt=\"Pulled Pork Tamale Pie\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC02973-300x241.jpg\" width=\"300\" height=\"241\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC02973-300x241.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC02973-1024x824.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC02973-624x502.jpg 624w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-1970\" class=\"wp-caption-text\">Pulled Pork Tamale Pie<\/figcaption><\/figure>\n<p>3 ounces Butter, melted<br \/>\n1 cup Cornmeal<br \/>\n3\/4 cup Flour<br \/>\n1 Tablespoon Sugar<br \/>\n1 1\/2 teaspoons Baking Powder<br \/>\n1\/2 teaspoon Baking Soda<br \/>\n1\/4 teaspoon Salt<br \/>\n2 Eggs, lightly beaten<br \/>\n1 1\/2 cups Buttermilk*<\/p>\n<p>1 (440ml) can Tomato Sauce<br \/>\n1 Tablespoon Epicure&#8217;s Poco Picante Salsa \u00a0Mix<br \/>\n1 1\/2 teaspoons each: Oregano, Basil, Parsley<br \/>\n1 teaspoon ground Cumin<\/p>\n<p>2 cups shredded pork<br \/>\n1 Tablespoon Epicure&#8217;s Poco Picante Salsa Mix<\/p>\n<p>1 cup shredded Cheddar Cheese or Tex Mex Cheese<br \/>\nChopped Cilantro<br \/>\nChopped Green Onions<\/p>\n<p>Preheat oven to 400F.<br \/>\nLightly grease a 9&#8243;x9&#8243; pan; set aside.<br \/>\nIn a large bowl combine cornmeal, flour, sugar, salt, baking powder and baking soda.<br \/>\nIn another bowl whisk together eggs, buttermilk and melted butter.<br \/>\nPour the liquid ingredients into the dry ingredients and stir just until combined, the batter may be lumpy.<br \/>\nPour batter into prepared baking dish.<br \/>\nBake for 20 minutes.<\/p>\n<p><span style=\"line-height: 1.714285714; font-size: 1rem;\">While cornbread is baking, combine tomato sauce, Epicure&#8217;s Poco Picante Mix, oregano, basil, parsley and cumin together in a small bowl or large measuring cup; set aside.<\/span><br \/>\nIn another small mixing bowl combine shredded pork with Epicure&#8217;s Poco Picante Mix; set aside.<\/p>\n<p>Remove cornbread from oven after 20 minutes; it won&#8217;t be quite set in the centre&#8230;.that&#8217;s okay.<br \/>\nWith a fork, poke holes all over the top of the cornbread.<br \/>\nPour tomato sauce mixture over crust.<br \/>\nEvenly spread shredded pork over tomato sauce topped crust.<br \/>\nTop with shredded cheese; cover with foil and return to oven for an additionally 20 &#8211; 30 minutes, or until cheese is melted and cornbread is cooked through. (test by inserting clean knife in the middle, it should come out without goopy cornmeal on the end of the knife)<br \/>\nRemove foil and bake for another 5 minutes.<br \/>\nRemove from oven, top with chopped cilantro or chopped green onions and allow to cool for 10 minutes before slicing.<\/p>\n<p>Serve with Tossed Green Salad, Guacamole and Sour Cream<\/p>\n<p>* if you don&#8217;t have Buttermilk on hand, pour 1 Tablespoon Lemon Juice into a measuring cup then add enough milk to measure 1 1\/2 cups; let sit for 10 minutes.<\/p>\n<p>Serves 6<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I make Pulled Pork quite often and end up with tonnes of left over Pulled Pork; there are only so many Pulled Pork Sandwiches Luke can consume!
