I usually make Banana Bread but well, I had enough for Banana Bread AND something else. My Cookie Jar has been empty since the Christmas Bake Off so I thought this might be a good time to fill it up again. Google to the rescue&#8230;again.<br \/>\nI found this recipe for <a target=\"_blank\">Peanut Butter and Banana Cookies<\/a> over at AllRecipes, clicked on it, was NOT phased by all the ingredients listed by metric weights, owing to the fact that I have a lovely lil digital kitchen scale that I ALWAYS use to measure butter and shortening and anything I don&#8217;t like scraping out of a measuring cup!<br \/>\nDid I mention that I had oodles of gooey banana muck in the freezer? Enough to double this recipe and still have a bit leftover for a lunchtime smoothie; I really must remember to use up my frozen bananas more often! This particular recipe might just be the answer! The cookies are crunchy and yummy like a peanut butter cookie while also being chewy like a perfectly baked chocolate chip cookie&#8230;.oh yea, I added extra Chocolate Chips and a handful of Butterscotch Chips to the recipe&#8230;Yum!<\/p>\n<figure id=\"attachment_1977\" aria-describedby=\"caption-attachment-1977\" style=\"width: 225px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1977\" rel=\"attachment wp-att-1977\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1977\" alt=\"Peanut Butter and Banana with Chocolate and Butterscotch Chip Cookies\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03005-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03005-225x300.jpg 225w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03005-768x1024.jpg 768w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03005-624x832.jpg 624w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><figcaption id=\"caption-attachment-1977\" class=\"wp-caption-text\">Peanut Butter and Banana with Chocolate and Butterscotch Chip Cookies<\/figcaption><\/figure>\n<p>250 g (1 cup) mashed Banana<br \/>\n260 g (1 cup) Peanut Butter<br \/>\n140 g (1\/2cup)Brown Sugar<br \/>\n200 g (1 cup)Sugar<br \/>\n1 1\/2 teaspoons Vanilla<br \/>\n330 g (1 1\/4 cup) Flour<br \/>\n1 Tablespoon Baking Powder<br \/>\n1 teaspoon Salt<br \/>\n80 g (1\/2 cup) Chocolate Chips<br \/>\n50 g (1\/3 cup) Butterscotch Chips<br \/>\n* My conversions to standard cup measures are APPROXIMATE &#8211; for best results, please do use the metric measures on a kitchen scale.<\/p>\n<p>Line 4 baking trays with parchment paper.<br \/>\nPreheat oven to 375F. (190C)<\/p>\n<p>In small mixing bowl combine flour, baking powder and salt.<br \/>\nIn standard mixing bowl, on low speed, mix together banana and peanut butter until well blended.<br \/>\nAdd brown sugar, sugar and vanilla; beat for 2 minutes.<br \/>\nStir in dry ingredients until no flour remains.<br \/>\nFold in chocolate and butterscotch chips.<br \/>\nUsing a #3 scoop, drop cookie dough onto prepared baking trays.<br \/>\nBake in 375F oven for 12 &#8211; 15 minutes, rotating trays half way through baking time.<br \/>\nAllow cookies to cool on baking tray for 5 minutes before removing to wire rack to cool completely.<\/p>\n<p>Yield: 3 dozen large cookies<\/p>\n<p>I used <a target=\"_blank\"> Weekend Bakery&#8217;s<\/a>\u00a0conversion chart to estimate the standard measurements.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I recently cleaned out my fridge freezer; waaaay too many gooopy bananas in there!
