I have not made real Cabbage Rolls for about 30 years so I really couldn&#8217;t remember what ingredients were involved. Google to the rescue.<br \/>\nI needed to make it Vegetarian so I could eat it too, but by all means, head on over to <a href=\"http:\/\/www.annaolson.ca\/files\/CabbageRollSoup.pdf\/\" target=\"_blank\">annaOlson<\/a> for the original recipe. I left out the bacon and the ground beef.<\/p>\n<figure id=\"attachment_2032\" aria-describedby=\"caption-attachment-2032\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2032\" rel=\"attachment wp-att-2032\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2032\" alt=\"Vegetarian Cabbage Roll Soup\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03087-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03087-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03087-1024x768.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03087-624x467.jpg 624w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2032\" class=\"wp-caption-text\">Vegetarian Cabbage Roll Soup<\/figcaption><\/figure>\n<p>2 Tablespoons Olive Oil<br \/>\n1 Onion, diced<br \/>\n1 stalk Celery, diced<br \/>\n1 Carrot, peeled and diced<br \/>\n1 pkg Just Like Ground Round<br \/>\n2 cloves Garlic, minced<br \/>\n6 cups Green or Savoy Cabbage, diced<br \/>\n2 (28 oz) tins Diced Tomatoes<br \/>\n1 Green Pepper, seeded and chopped<br \/>\n3 cups Vegetable Stock<br \/>\n1\/4 cup Cider Vinegar<br \/>\n1 Tbsp Sweet Paprika<br \/>\n2 teaspoon Celery Salt<br \/>\n2 Bay Leaves<br \/>\n1\/2 Brown Rice<br \/>\nSalt and Pepper, to taste<br \/>\nSour Cream, garnish<\/p>\n<p>In a large, heavy-bottom soup pot heat olive oil over med-high heat.<br \/>\nAdd and cook onion for about 3 minutes.<br \/>\nStir in diced celery and carrot; cook for another 5 minutes.<br \/>\nStir in Just Like Ground Round; and garlic and cook for another minute or two.<br \/>\nStir in the cabbage and add the tomatoes, diced green pepper, \u00a0stock, vinegar, paprika, celery salt, bay leaves and rice.<br \/>\nCover the pot and bring it to a boil.<br \/>\nReduce heat to a gentle simmer and cook until the rice is fully cooked, about 40 minutes.<br \/>\nSeason with salt and pepper to taste.<br \/>\nRemove the bay leaves and serve, garnished with a dollop of sour cream<\/p>\n<p>* I grilled some chicken breasts, chopped one up and topped my husbands soup with it.<\/p>\n<p>* I used my Food Processor to slice the celery, carrot and cabbage<\/p>\n<p>* Next time I will add a Tablespoon or two of Tomato Paste<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I had a head of cabbage in the fridge that needed to be made into soup and seeing it was super cold on Sunday, Cabbage Roll Soup sounded pretty good!
