This year instead of the obligatory Shamrock Sugar Cookies with Green Icing I made Guinness Fried Chicken! And Bailey&#8217;s Irish Creme Cupcakes with Bailey&#8217;s Irish Creme Buttercream Frosting; I can&#8217;t vouch for the chicken but the cupcakes were splendid!<\/p>\n<p>I used to see a lot of recipes containing Guinness but never tried any of them before now. \u00a0Too bad because when we lived in Australia my dear husband often bought Guinness and would have regularly had some on hand; for this recipe I had to go to the Bottle Shop specifically to pick up \u00a0a single can of Guinness. All good, whilst there I spotted the display for Bailey&#8217;s Irish Creme which inspired me to make the cupcakes. Anyway, I googled Guinness + Chicken and chose this offering from <a href=\"http:\/\/www.globalfoodfusion.co\/\" target=\"\">globalfoodfusion <\/a>. Specifically speaking, I came up with Ursula&#8217;s interesting tale; how to ogle handsome firemen and make great tasting chicken! I made a few changes to her recipe simply because I used what I had on hand but feel free to head over to her recipe for <a target=\"\">Guinness Fried Chicken <\/a> &#8230;who knows, maybe using her recipe will garner you an audience with handsome firemen too.<\/p>\n<p>I grilled husband and son about the chicken; they were happy with the crunch factor, flavour &#8211; good. That&#8217;s as good as it gets around here. The lil grandson loved it, too; getting a finicky toddler to eat much of anything is always a victory!<\/p>\n<figure id=\"attachment_2144\" aria-describedby=\"caption-attachment-2144\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2144\" rel=\"attachment wp-att-2144\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2144\" alt=\"guinness fried chicken\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03364-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03364-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03364-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2144\" class=\"wp-caption-text\">Guinness Fried Chicken<\/figcaption><\/figure>\n<p>1 kg Chicken &#8211; I used Boneless, Skinless Thighs, pounded to 1\/4&#8243; thickness<br \/>\nCanola Oil, for frying, about 1\/2 litre<br \/>\n<span style=\"text-decoration: underline;\"><strong>Batter<\/strong><\/span><br \/>\n1 \u00a03\/4 cups Flour<br \/>\n2 Tablespoons Cornmeal<br \/>\n2 teaspoons Parsley<br \/>\n1\/2 teaspoon Garlic Powder<br \/>\n1 1\/2 teaspoon Salt<br \/>\n1\/2 teaspoon Paprika<br \/>\n1\/2 teaspoon Dry Mustard Powder<br \/>\n1\/2 teaspoon Ground Coriander<br \/>\n1 teaspoon Dried Basil<br \/>\n1\/2 teaspoon Freshly Ground Black Pepper<br \/>\n2 Eggs, beaten<br \/>\n8 ounces Guinness<br \/>\n<span style=\"text-decoration: underline;\"><strong>Breadcrumb Mixture<\/strong><\/span><br \/>\n1 cup Flour<br \/>\n4 cups Bread Crumbs<br \/>\n1 teaspoon Italian Seasoning<br \/>\n1 teaspoon Dried Basil<br \/>\n1 teaspoon Salt<br \/>\n1 teaspoon Parsley<br \/>\n1\/2 teaspoon Freshly Ground Black Pepper<\/p>\n<p>Pound chicken thighs to 1\/4&#8243; thickness.<br \/>\nPour Oil into a large (30cm) deep skillet; do not turn on yet.<br \/>\nPlace a wire rack on a baking tray covered with L-Foil, for easy clean up; set aside.<\/p>\n<p>In a large, shallow mixing bowl whisk together flour, herbs and spices.<br \/>\nLightly beat eggs; add eggs and Guinness to flour mixture and stir with whisk until no lumps remain.<\/p>\n<p>In large, shallow mixing bowl combine flour, breadcrumbs, Italian seasoning, basil, salt &amp; pepper and parsley.<\/p>\n<p>Turn oil on to Medium-High to heat while breading the chicken.Lightly coat a piece of chicken in the breadcrumb mixture.<br \/>\nDip into batter, allow some of the batter to drip off.<br \/>\nReturn chicken to breadcrumb mixture and coat again.<br \/>\nPlace on a plate.<br \/>\nRepeat with each piece of chicken.<\/p>\n<p>Place two or three pieces of prepared chicken into the hot oil.<br \/>\nCook for 3 &#8211; 5 minutes, until golden and crispy &#8211; do not repeatedly turn over &#8211; just lift the edge of a piece of chicken to have a quick peak<br \/>\nUsing long handled tongs, turn over and continue cooking for another 3 &#8211; 5 minutes, until golden brown and crispy.<br \/>\nLift chicken out of oil and let drip for a few seconds.<br \/>\nPlace cooked chicken on \u00a0prepared wire rack to drain off excess oil.<br \/>\nServe with your favourite dipping sauce.<\/p>\n<p>Serves 6 &#8211; 8<\/p>\n<figure id=\"attachment_2145\" aria-describedby=\"caption-attachment-2145\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2145\" rel=\"attachment wp-att-2145\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2145\" alt=\"Guinness Fried Chicken\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03369-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03369-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03369-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2145\" class=\"wp-caption-text\">Guinness Fried Chicken<\/figcaption><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>St. Patrick&#8217;s Day has come and gone for another year.
