A real, \u00a0hardworking-man&#8217;s job in the outdoors, facing all the elements&#8230;not belittling the job my husband does&#8230;.man, \u00a0a morning of sitting at my computer uploading recipes really makes me appreciate what HE does! My brains would fall out if I was a computer programmer!<\/p>\n<p>Anyway, Ryan went back to his job in forestry after working the Winter season at Manning Park Ski Resort. After working outdoors all day long, with the temperatures still so cold, I needed a hot meal on the table to greet Ryan when he came home from work; trouble is, now that I am not working, I don&#8217;t spend quite so much at the grocery store&#8230;I am sure Save On Foods stocks have dropped! After foraging in the freezer I found 3 chicken breasts that I could use to make a stew. Luckily I had just been to the produce shop and had heaps of fresh veg on hand!<\/p>\n<p>I think I looked in my Betty Crocker cookbook but didn&#8217;t find what I was looking for so I googled Chicken + Stew and chose the recipe on offer for <a href=\"http:\/\/www.canadianliving.com\/food\/chicken_stew_with_dumplings.php\/\" target=\"_blank\"> Chicken Stew with Dumplings <\/a> from my friends at <a href=\"http:\/\/www.canadianliving.com\/food\/\" target=\"_blank\">Canadian Living.<\/a><\/p>\n<figure id=\"attachment_2163\" aria-describedby=\"caption-attachment-2163\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2163\" rel=\"attachment wp-att-2163\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2163 \" alt=\"Chicken Stew with Dumplings\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03335-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03335-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03335-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2163\" class=\"wp-caption-text\">Chicken Stew with Dumplings simmering on the stove.<\/figcaption><\/figure>\n<p>5 cups Water<br \/>\n2 Mc Cormicks Chicken Stock Cubes<br \/>\n3 Boneless, Skinless Chicken Breasts, cut into bite sized pieces<br \/>\n1 bunch Fresh Carrots, scrubbed and cut into chunks<br \/>\n2 Potatoes, peeled and cut into cubes<br \/>\n1 Sweet Potato, peeled and cut into cubes<br \/>\n3 Tablespoons Butter<br \/>\n3 stalks Celery, chopped<br \/>\n1 Onion, diced<br \/>\n2 cups Mushrooms, sliced<br \/>\n1\/3 cup Flour<br \/>\n1 teaspoon Thyme<br \/>\n1\/2 teaspoon Salt<br \/>\n1\/2 teaspoon Pepper<br \/>\n1\/2 cup Frozen Peas<br \/>\n1\/4 cup Whipping Cream<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Dumplings<\/span><\/strong><br \/>\n2 cups Flour<br \/>\n1 Tablespoon dried Parsley<br \/>\n4 teaspoons Baking Powder<br \/>\n1\/2 teaspoon Salt<br \/>\n2 Tablespoon (1 ounce)\u00a0\u00a0Butter<br \/>\n3\/4 cup Milk<\/p>\n<p>In large pot bring water and chicken stock cubes to a boil.<br \/>\nAdd chicken; cover and simmer over medium-low heat for about 20 minutes.<br \/>\nWith slotted spoon, transfer to a medium size mixing bowl.<br \/>\nAdd carrots, potatoes and sweet potatoes to stock; cover and cook for 10 minutes.<br \/>\nWith slotted spoon, remove potatoes and sweet potatoes to bowl holding chicken.<br \/>\nPour stock into a large measuring cup, adding water to make 5 cups (1.25litres); set aside.<br \/>\nIn same pot, melt butter over medium-high heat and cook celery, onion and &#8216;shrooms, stirring often, until softened, about 8 minutes.<br \/>\nAdd flour, thyme, salt and pepper; cook stirring for 1 minute.<br \/>\nGradually whisk in reserved stock; bring to a boil, stirring.<br \/>\nReduce heat to medium-low; simmer, stirring often, for about 5 minutes or until thick enough to coat back of spoon.<br \/>\nReturn chicken, carrots, potatoes and sweet potatoes, and any accumulated juices to pot.<br \/>\nStir in frozen peas and whipping cream, to combine.<br \/>\nSimmer over medium-low heat.<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Dumplings:<\/span><\/strong><br \/>\nIn bowl, whisk together flour, baking powder, parsley, salt.<br \/>\nUsing a pastry blender cut in butter &#8211; or you can just rub butter in with your hands until mixture resembles coarse crumbs.<br \/>\nUsing a fork, stir in enough milk to make a sticky dough.<br \/>\nLeaving space around each, drop by Tablespoonfuls (15ml) &#8211; I use a #3 Scoop &#8211; onto simmering stew.<br \/>\nCover and cook, without lifting lid, for 15 minutes, or until dumplings are no longer doughy underneath.<\/p>\n<p>Serves 8<\/p>\n<figure id=\"attachment_2164\" aria-describedby=\"caption-attachment-2164\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2164\" rel=\"attachment wp-att-2164\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2164\" alt=\"Chicken Stew with Dumplings\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03338-300x228.jpg\" width=\"300\" height=\"228\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03338-300x228.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03338-1024x780.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2164\" class=\"wp-caption-text\">Chicken Stew with Dumplings<\/figcaption><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>Ryan went back to his real job this week.
