I used Chef Nathan&#8217;s presentation method but used a different recipe for the stuffing. Mushrooms, finely diced<br \/>\n1 Tablespoon Balsamic Vinegar<br \/>\n3 Tablespoons Bread Crumbs<br \/>\n2 Tablespoons Parmesan Cheese<\/p>\n<p>3 Cherry Tomatoes, sliced<br \/>\nCilantro<br \/>\nParmesan Cheese<\/p>\n<p>Preheat oven to 350F.<br \/>\nLine a baking tray with parchment paper; set aside.<\/p>\n<p>In saute pan, on medium-high heat, heat olive oil.<br \/>\nAdd diced shallot and cook for a minute or two.<br \/>\nAdd diced garlic and continue cooking for a few minutes.<br \/>\nAdd finely diced \u00a0reserved zucchini pulp.<br \/>\nAdd diced mushrooms and cook until mushrooms are softened, about 10 minutes.<br \/>\nRemove from heat and add balsamic vinegar, bread crumbs and parmesan cheese; mix thoroughly.<br \/>\nSpoon equal amounts of stuffing into each zucchini cylinder; top each with a slice of cherry tomato.<\/p>\n<p>Bake for 10 &#8211; 15 minutes.<br \/>\nRemove from oven, garnish with fresh cilantro and a sprinkling of parmesan cheese.<\/p>\n<p>Serves 4<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We made this at school a few weeks ago and I was eager to try it at home.
