{"id":224,"date":"2011-05-11T03:02:17","date_gmt":"2011-05-11T03:02:17","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=224"},"modified":"2011-05-20T17:45:18","modified_gmt":"2011-05-20T17:45:18","slug":"7-layer-meatless-tortilla-pie","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=224","title":{"rendered":"7 Layer Meatless Tortilla Pie"},"content":{"rendered":"<p>You bought a package of Flour Tortillas and they have been sitting in the fridge for a few days&#8230;this is a great way to put them to good use!<\/p>\n<figure id=\"attachment_226\" aria-describedby=\"caption-attachment-226\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a rel=\"attachment wp-att-226\" href=\"http:\/\/aysontespli.ca\/?attachment_id=226\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-226\" title=\"IMG_2777\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_27771-300x217.jpg\" alt=\"\" width=\"300\" height=\"217\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_27771-300x217.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_27771.jpg 526w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-226\" class=\"wp-caption-text\">A Mexican version of Lasagne!<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>2 (540 ml) cans \u00a0Red Kidney Beans, drained and well rinsed<br \/>\n2 \u00a0cups Salsa<br \/>\n2 Tablespoons chopped Fresh Cilantro<br \/>\n4 cloves Garlic, crushed<br \/>\n3\/4 teaspoon Chili Flakes<br \/>\n1 teaspoon Cumin<br \/>\n1\/2 teaspoon Coriander<br \/>\n1 teaspoon Oregano<br \/>\n1 teaspoon Salt<br \/>\n1\/2 teaspoon Paprika<br \/>\n1 Tablespoon Lime Juice<br \/>\n1 (540 ml) can Black Beans, drained and well rinsed<br \/>\n1 small Tomato, diced<br \/>\n7 (8in) Flour Tortillas<br \/>\n2 cups shredded Old Cheddar Cheese<br \/>\n1 cup shredded Monterey Jack Cheese<br \/>\n1\/2 cup Salsa<br \/>\n1 cup Sour Cream<br \/>\nSliced Black Olives<br \/>\nSliced Green Onion<\/p>\n<p>Pour rinsed kidney beans into a medium size mixing bowl and mash or puree with a stick blender.<br \/>\nStir in half of the salsa, garlic, chili, cumin, coriander, oregano, salt, paprika and lime juice.<br \/>\nIn another mixing bowl, combine rinsed black beans, chopped tomato and cilantro.<\/p>\n<p>Preheat oven to 400F.<br \/>\nLightly grease a 10inch springform pan with Vegetable Oil Spray.<\/p>\n<p>Place 1 tortilla in springform pan.<br \/>\nSpread 3\/4 cup of kidney bean mixture over tortilla<br \/>\nSprinkle with 1\/4 cup of Cheddar Cheese and a sprinkling of Monterey Jack Cheese.<br \/>\nTop with another tortilla and 2\/3 cup of the black bean mixture.<br \/>\nSprinkle with 1\/4 cup of Cheddar Cheese and a sprinkling of Monterey Jack Cheese.<br \/>\nRepeat layers twice.<br \/>\nTop with remaining tortilla and spread with sour cream, 1\/2 cup salsa, a bit of shredded Cheddar cheese and sliced black olives.<\/p>\n<p>Place springform pan on baking sheet and Bake in 400F oven for 40 minutes or until hot and bubbly.
