These remind of Dad’s Cookies we used to get in our lunch boxes when we were kids. They were neatly folded in wax paper and the smell of cinnamon would engulf you when you opened up the package.<\/p>\n

Heart warming Oatmeal Cookies<\/figcaption><\/figure>\n

1\/2 cup Butter, softened
\n1 cup Sugar
\n2 Eggs
\n1\/3 cup Molasses
\n1 teaspoon Vanilla<\/p>\n

1 3\/4 cup Flour
\n1 teaspoon Baking Soda
\n1\/2 teaspoon Salt
\n1 1\/2 teaspoon Cinnamon
\n1 cup Coconut
\n2 cups Rolled Oats<\/p>\n

Preheat oven to \u00a0360F.
\nLightly spray baking trays with vegetable oil spray.<\/p>\n

In medium mixing bowl combine flour, baking soda, salt, cinnamon, coconut and rolled oats; set aside.<\/p>\n

In large mixing bowl cream together butter and sugar.
\nBeat in eggs, on at a time; add molasses and vanilla and beat until for another minute.
\nGradually stir dry ingredients into the creamed mixture and mix well.<\/p>\n

Use a 2 ounce scoop to drop out onto prepared baking trays.
\nBake in 360F oven for 8 to 10 minutes.
