{"id":374,"date":"2011-08-09T02:22:39","date_gmt":"2011-08-09T02:22:39","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=374"},"modified":"2011-08-09T02:22:39","modified_gmt":"2011-08-09T02:22:39","slug":"chicken-pot-pie","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=374","title":{"rendered":"Chicken Pot Pie"},"content":{"rendered":"<p>Such an easy meal to prepare and this one can easily be made Vegetarian by subbing in \u00a0Yves &#8220;Chicken Tenders&#8221;.<\/p>\n<figure id=\"attachment_376\" aria-describedby=\"caption-attachment-376\" style=\"width: 420px\" class=\"wp-caption alignnone\"><a rel=\"attachment wp-att-376\" href=\"http:\/\/aysontespli.ca\/?attachment_id=376\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-376\" title=\"Chix Pot Pie\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Chix-Pot-Pie1.jpg\" alt=\"\" width=\"420\" height=\"420\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Chix-Pot-Pie1.jpg 420w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Chix-Pot-Pie1-150x150.jpg 150w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Chix-Pot-Pie1-300x300.jpg 300w\" sizes=\"auto, (max-width: 420px) 100vw, 420px\" \/><\/a><figcaption id=\"caption-attachment-376\" class=\"wp-caption-text\">Chicken Pot Pie<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>1\/3 cup Butter<br \/>\n1\/3 cup Flour<br \/>\n1\/3 cup Chopped Onion<br \/>\n1 teaspoon minced Garlic<br \/>\n1\/3 cup Chopped Celery<br \/>\n2 medium Potatoes, scrubbed and cut into small cubes<br \/>\n1\/2 teaspoon Salt<br \/>\n1\/4 teaspoon Pepper<br \/>\n1 3\/4 cup Chicken Broth (Vegetable Broth)<br \/>\n2\/3 cup Milk (Soy Milk)<br \/>\n2 cups cooked cut up Chicken<br \/>\n1 (10 ounce) pkg Frozen Peas and Corn<br \/>\n1\/2 teaspoon each Sage, Thyme and Parsely<\/p>\n<p>Heat butter over low heat until melted.<br \/>\nSautee onion until softened and translucent; add garlic and continue sauteing.<br \/>\nStir in flour, salt and pepper; cook over low heat, stirring constantly until mixute is smooth and bubbly.<br \/>\nRemove from heat.<br \/>\nStir in broth and milk.<br \/>\nHeat to boiling, stirring constantly.<br \/>\nBoil and stir 1 minute.<br \/>\nStir in cut up chicken, \u00a0frozen peas and carrots and herbs.<br \/>\nSet aside.<br \/>\nIn a microwaveable casserole dish combine chopped celery and diced potatoes. Add about an inch of water and cook on High for 5 minutes.<br \/>\nDrain and stir into chicken mixture.<\/p>\n<p>Preheat oven to 425F.<\/p>\n<p>Prepare Celery Seed Pastry.<br \/>\nRoll 2\/3 of the pastry into a 13&#8243; circle on lightly floured cloth-covered board.<br \/>\nEase pastry into a 9&#8243; deep dish pie plate.<br \/>\nPour Chicken Filling into pastry lined plate.<br \/>\nRoll remaining dough into \u00a010&#8243; circle; place over filling.<br \/>\nRoll edges under; flute.<br \/>\nCut slits in center to allow steam to escape.<br \/>\nBake uncovered in 425F degree oven until crust in golden brown, about 30 &#8211; 35 minutes.<br \/>\n*If you like you can brush the chicken pot pie with an egg wash before baking &#8211; 1 egg, lightly beaten stirred together with 1 Tablespoon water.<\/p>\n<p><strong>Celery Seed Pastry<\/strong><\/p>\n<p>2\/3 cup Lard or<br \/>\n2\/3 cup plus 2 Tablespoons Shortening<br \/>\n2 cups Flour<br \/>\n2 teaspoons Celery Seed<br \/>\n1 teaspoon Salt<br \/>\n4 &#8211; 5 Tablespoons Ice Cold Water<\/p>\n<p>Cut shortening into flour, salt and celery seed until particles are the size of small peas.<br \/>\nSprinkle in water, 1 Tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl.
