These muffins are great plain too. I often make them without the streusel topping and give them a light dusting of icing sugar instead.<\/p>\n<figure id=\"attachment_2065\" aria-describedby=\"caption-attachment-2065\" style=\"width: 300px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=2065\" rel=\"attachment wp-att-2065\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2065\" alt=\"blueberry muffins\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03162-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03162-300x225.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/DSC03162-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-2065\" class=\"wp-caption-text\">Blueberry Surprise Muffins<\/figcaption><\/figure>\n<p>2 cups Flour<br \/>\n3 teaspoons Baking Powder<br \/>\n1\/2 teaspoon Salt<br \/>\n1\/3 cup Sugar<\/p>\n<p>1 Egg, lightly beaten (or Egg Replacer)<br \/>\n1\/2 cup Vegetable Oil<br \/>\n3\/4 cup Milk (or Soy Milk)<br \/>\n1 1\/2 teaspoons Vanilla<\/p>\n<p>1 cup Fresh Blueberries (or frozen, do not thaw: toss with 1 Tablespoon Flour in a small mixing bowl)<br \/>\n1\/4 cup Blueberry Danish Filling or Blueberry Jam<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Optional<br \/>\nStreusel Topping<\/span><br \/>\n<\/strong>1\/4 cup Brown Sugar<br \/>\n1\/4 cup Flour<br \/>\n2 Tablespoons Butter, cold<\/p>\n<p>Preheat oven to 375F.<br \/>\nLine 12 muffin cups with paper liners; set aside.<\/p>\n<p><span style=\"text-decoration: underline;\">If using, prepare Streusel Topping:<\/span><br \/>\nIn small mixing bowl combine brown sugar and flour. Rub in butter until mixture resembles coarse crumbs. Set aside.<\/p>\n<p>In large mixing bowl, combine flour, baking powder and salt; make a well in the centre.<\/p>\n<p>In a small mixing bowl beat egg lightly; stir in oil, milk and vanilla.<\/p>\n<p>Pour liquid ingredients all at once into flour mixture and stir just until combined.<\/p>\n<p>Use a 3-ounce scoop to partially fill each muffin cup.<br \/>\nCarefully spoon 1\/4 teaspoon blueberry danish filling into each cup.<br \/>\nFold fresh blueberries into remaining muffin mixture then cover filling with remaining batter; top each muffin with (if using) a 1\/2 teaspoon of streusel topping.<\/p>\n<p>Bake in 375F preheated oven for 10 minutes.<br \/>\nRotate pan and continue baking for another 10 minutes or until pick inserted in centre comes out clean.<br \/>\nRemove from oven and cool on wire rack for 10 minutes before turning out to cool completely.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Nothing better than fresh out of the oven Blueberry Surprise Streusel Muffins when blueberries are in season!
