{"id":470,"date":"2012-01-15T16:37:16","date_gmt":"2012-01-15T16:37:16","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=470"},"modified":"2012-01-15T16:53:23","modified_gmt":"2012-01-15T16:53:23","slug":"peach-streusel-muffins-2","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=470","title":{"rendered":"Peach Streusel Muffins"},"content":{"rendered":"<p>These are perfect to use up those Peaches and Nectarines that are beyond eye appeal for eating but still perfectly good!<\/p>\n<p>I often double my Muffin Recipe and make 20 to 21 larger muffins.<\/p>\n<figure id=\"attachment_991\" aria-describedby=\"caption-attachment-991\" style=\"width: 538px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=991\" rel=\"attachment wp-att-991\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-991\" title=\"Peach Streusel Muffins\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4062.jpg\" alt=\"Peach Streusel Muffins\" width=\"538\" height=\"392\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4062.jpg 538w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4062-300x218.jpg 300w\" sizes=\"auto, (max-width: 538px) 100vw, 538px\" \/><\/a><figcaption id=\"caption-attachment-991\" class=\"wp-caption-text\">Peach Streusel Muffins<\/figcaption><\/figure>\n<p>1 cup Whole Wheat Flour<br \/>\n1 cup Flour<br \/>\n1 Tablespoon Baking Powder<br \/>\n1\/2 teaspoon Salt<br \/>\n1\/3 cup Sugar<br \/>\n3\/4 teaspoon Cinnamon<\/p>\n<p>1 large Egg, slightly beaten (Egg Replacer)<br \/>\n3\/4 cup Milk (Soy Milk)<br \/>\n1\/2 Vegetable Oil (I usually use half oil, half melted butter)<br \/>\n1 teaspoon Vanilla<\/p>\n<p>4 &#8211; 5 Peaches or Nectarines, peeled and thickly sliced<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Streusel Topping<br \/>\n<\/strong><\/span>1 cup Brown Sugar, packed<br \/>\n1\/2 cup Flour<br \/>\n1\/2 cup Butter, slightly softened<\/p>\n<p>Preheat oven to 400F.<br \/>\nLine muffin tin with paper liners; set aside.<\/p>\n<p>Prepare Streusel Topping:<br \/>\nCombine brown sugar and flour together in small mixing bowl.<br \/>\nCut butter into cubes and toss into the flour mixture.<br \/>\nRub together until crumbly.<\/p>\n<p>* I make a large amount of Streusel Topping from time to time and keep it handily stored in a Tupperware Round #3 Modular Mate in the fridge.<\/p>\n<p>In large mixing bowl combine flour, baking powder, sugar, salt and cinnamon.<br \/>\nAdd prepared fruit and toss to coat with flour; make a well in the centre and set aside.<br \/>\nIn large pyrex measuring cup melt some butter, add enough oil to measure 1\/2 cup; add milk (soy milk), vanilla and egg (egg replacer).<br \/>\nStir with fork to combine.<br \/>\nAdd liquid ingredients all at once to dry ingredients and stir just until moistened.<br \/>\nUse a 5ounce Pampered Chef scoop to fill each prepared muffin cup.<br \/>\nTop with a scant teaspoon of Streusel Topping.<\/p>\n<p>Bake in preheated 400F oven for 10 minutes, rotate pan(s) and bake for another 10 minutes or until golden brown and pick in centre comes out clean.<\/p>\n<p>Remove from oven and cool in pan(s) on wire rack for 10 minutes.<br \/>\nTurn out and cool completely.<br \/>\nStore in airtight container for 2 &#8211; 3 days.<\/p>\n<p>Yield: 12 Muffins<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These are perfect to use up those Peaches and Nectarines that are beyond eye appeal for eating but still perfectly good!
