My brother Bill and I worked together at Smitty&#8217;s and the favourite coffee break snack was a Bran Muffin fresh out of the oven with a portion of whippped butter and a dollop of honey. Yummers!<\/p>\n<figure id=\"attachment_535\" aria-describedby=\"caption-attachment-535\" style=\"width: 350px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=535\" rel=\"attachment wp-att-535\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-535\" title=\"Date Bran Muffins\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Date-Bran-Muffins.jpg\" alt=\"\" width=\"350\" height=\"287\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Date-Bran-Muffins.jpg 350w, http:\/\/aysontespli.ca\/wp-content\/uploads\/Date-Bran-Muffins-300x246.jpg 300w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><\/a><figcaption id=\"caption-attachment-535\" class=\"wp-caption-text\">Wonderfully moist!<\/figcaption><\/figure>\n<p>1 1\/2 cups Raw Bran<br \/>\n1 cup Buttermilk<br \/>\n1\/3 cup Vegetable Oil<br \/>\n1 large Egg<br \/>\n2\/3 cup Brown Sugar<br \/>\n1 1\/2 teaspoons Vanilla<\/p>\n<p>1 cup Flour<br \/>\n1 teaspoon Baking Soda<br \/>\n1 teaspoon Baking Powder<br \/>\n1teaspoon Cinnamon<br \/>\npinch of ground Cloves<br \/>\n1\/2 teaspoon Salt<\/p>\n<p>3\/4 cup Chopped Dates<\/p>\n<p>Preheat oven to 375F (190C)<br \/>\nLine muffin tin with paper liners.<\/p>\n<p>In small mixing bowl combine bran and buttermilk and let sit for 10 minutes.<\/p>\n<p>Meanwhile, in large mixing bowl, combine flour, baking soda, baking powder, cinnamon, ground cloves, salt and chopped dates; make a well in the center.<\/p>\n<p>In small mixing bowl, lightly beat the egg, add vanilla and vegetable oil.<br \/>\nStir brown sugar into buttermilk soaked bran then add egg mixture and continue stirring.<\/p>\n<p>Pour the combined wet ingredients into the dry ingredients and stir just until all the flour is moistened. The batter will be lumpy.<\/p>\n<p>Using a 5 ounce Pampered Chef scoop, or a heaping tablespoon, \u00a0portion batter into prepared muffin tin.<\/p>\n<p>Bake in preheated oven for 10 minutes, rotate and continue baking for another 7 &#8211; 10 minutes.<br \/>\nRemove from oven when pick inserted comes out clean and let rest, in pan on a wire rack for 10 minutes.<br \/>\nTurn out of muffin tin to cool completely.<\/p>\n<p>Yield: 12 muffins<\/p>\n","protected":false},"excerpt":{"rendered":"<p>These bring back memories of the Bran Muffins we used to get at Smitty&#8217;s Pancake house back in the 70s.
