The only trouble is that they are very addictive! &#8220;Oh, just one more&#8230;&#8221;<\/div>\n<div><a href=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/recipes-1\/welshcakes\/IMG_1150.JPG?attredirects=0\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/_\/rsrc\/1277250237938\/recipes-1\/welshcakes\/IMG_1150.JPG?height=111&amp;width=200\" alt=\"\" width=\"200\" height=\"111\" border=\"0\" \/><\/a><\/div>\n<div>3 cups Flour<\/div>\n<div>1 1\/2 teaspoons Baking Powder<\/div>\n<div>1\/2 teaspoon Baking Soda<\/div>\n<div>3\/4 tsp Nutmeg<\/div>\n<div>1 tsp Cinnamon<\/div>\n<div>1\/2 teaspoon Salt<\/div>\n<div>1 cup Shortening (butter works too)<\/div>\n<div>1\/4 cup Sugar<\/div>\n<div>2 Eggs, lightly beaten<\/div>\n<div>1\/3 cup Milk<\/div>\n<div>1 cup Currants<\/div>\n<div>1\/4 cup Sugar or Icing Sugar<\/div>\n<div>1 teaspoon Cinnamon<\/div>\n<div>Combine Sugar or Icing Sugar and Cinnamon in s small, wide bowl; Set aside.<\/div>\n<div>Cream together Shortening and Sugar. Add Milk and Eggs.<\/div>\n<div>Sift in Flour, BP, BS, Salt, Nutmeg and Cinnamon and stir.<\/div>\n<div>Add currants and continue stirring.<\/div>\n<div>\n<div><a href=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/recipes-1\/welshcakes\/IMG_1146.JPG?attredirects=0\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/_\/rsrc\/1277250028486\/recipes-1\/welshcakes\/IMG_1146.JPG?height=163&amp;width=200\" alt=\"\" width=\"200\" height=\"163\" border=\"0\" \/><\/a><\/div>\n<\/div>\n<div>Turn out onto a lightly floured surface and gently knead until soft and smooth, about 10 times.<\/div>\n<div>Apply another light dusting of flour to work surface and proceed to roll dough out to 1\/4 inch thickness.<\/div>\n<div>\n<div><a href=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/recipes-1\/welshcakes\/IMG_1147.JPG?attredirects=0\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/_\/rsrc\/1277250098090\/recipes-1\/welshcakes\/IMG_1147.JPG?height=115&amp;width=200\" alt=\"\" width=\"200\" height=\"115\" border=\"0\" \/><\/a><\/div>\n<\/div>\n<div>Cut with desired cookie cutter.<\/div>\n<div>\n<div><a href=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/recipes-1\/welshcakes\/IMG_1148.JPG?attredirects=0\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/_\/rsrc\/1277250143336\/recipes-1\/welshcakes\/IMG_1148.JPG?height=150&amp;width=200\" alt=\"\" width=\"200\" height=\"150\" border=\"0\" \/><\/a><\/div>\n<\/div>\n<div>Preheat Cast Iron frying pan over Medium High heat.<\/div>\n<div>Add 6 &#8211; 8 Welsh Cakes to dry pan, depending on size, and cook for 3 minutes; flip and continue cooking for another 3 minutes.<\/div>\n<div>\n<div><a href=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/recipes-1\/welshcakes\/IMG_1149.JPG?attredirects=0\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/sites.google.com\/site\/sonteisservingitup\/_\/rsrc\/1277250193221\/recipes-1\/welshcakes\/IMG_1149.JPG?height=150&amp;width=200\" alt=\"\" width=\"200\" height=\"150\" border=\"0\" \/><\/a><\/div>\n<\/div>\n<div>Remove from pan and drop into Sugar\/Cinnamon mixture to coat each Welsh Cake.<\/div>\n<div>Cool completely on a wire rack.<\/div>\n<p><span class=\"Apple-style-span\" style=\"font-size: 12px; line-height: 18px;\"><br \/>\n<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I started making Welsh Cakes about 23 years ago because they satisfied the Sweet Tooth without a whole lot of sugar!
