The scones are so basic and so good! I got this recipe from a Province newspaper many years ago. You know I have to switch it up from time to time! Sometimes I add White Chocolate Chunks and fresh Raspberries for a sweet delight! Often I will swap in Fresh or Frozen Blueberries. Sometimes I add cinnamon to the dry ingredients, give the scored dough an egg wash and sprinkle with a bit of Cinnamon and Sugar; you really have to watch these ones don&#8217;t brown too quickly!<br \/>\nI have even cut back the sugar and made a Savoury Scone with grated Cheddar and Herbs.<br \/>\nThis is a great, versatile recipe.<\/p>\n<figure id=\"attachment_979\" aria-describedby=\"caption-attachment-979\" style=\"width: 526px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=979\" rel=\"attachment wp-att-979\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-979\" title=\"Raisin Scones\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4342.jpg\" alt=\"Raisin Scones\" width=\"526\" height=\"394\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4342.jpg 526w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4342-300x224.jpg 300w\" sizes=\"auto, (max-width: 526px) 100vw, 526px\" \/><\/a><figcaption id=\"caption-attachment-979\" class=\"wp-caption-text\">Raisin Scones<\/figcaption><\/figure>\n<p>2 cups Flour<br \/>\n1\/4 cup Sugar<br \/>\n2 1\/2 teaspoons Baking Powder<br \/>\n1\/2 teaspoon Baking Soda<br \/>\n3\/4 teaspoon Salt<br \/>\n1\/4 cup Shortening, cold and cubed<br \/>\n3\/4 cup Raisins, soaked and well drained<br \/>\n*1 cup Buttermilk<\/p>\n<p>Preheat oven to 425F.<br \/>\nSprinkle a little bit of cornmeal on a baking tray or a pizza pan; set aside.<\/p>\n<p>Combine flour, baking powder, baking soda and salt in a large mixing bowl.<br \/>\nCut in shortening until mixture resembles coarse meal.<br \/>\nAdd raisins and buttermilk, stirring with fork until all ingredients are moistened. (Dough will be sticky)<br \/>\nTurn out onto a well floured surface \u00a0and gently knead for about a minute.<br \/>\nShape dough into a ball, cover with a clean tea towel and let sit for about 10 minutes.<br \/>\nPat down dough to form a circle, 3\/4&#8243; (2cm) thick and about 8&#8243; (20cm) in diameter; transfer to prepared baking tray.<br \/>\nScore round into 6 &#8211; 8 wedges, gently with a knife.<br \/>\nBake in hot oven for 20 &#8211; 25 minutes or until golden brown and set in centre.<br \/>\nCover with foil if becoming brown to quickly.<\/p>\n<p>Serve while warm.<\/p>\n<p>Makes 6 &#8211; 8<\/p>\n<p>*If you don&#8217;t have Buttermilk, sour the milk with 1 Tablespoon Lemon Juice or Vinegar &#8211; Measure Acidic ingredient into a measuring cup, add milk to 1 cup measure, let stand for 10 minutes.
