{"id":605,"date":"2011-10-19T10:06:26","date_gmt":"2011-10-19T10:06:26","guid":{"rendered":"http:\/\/aysontespli.ca\/?p=605"},"modified":"2012-04-23T12:19:04","modified_gmt":"2012-04-23T12:19:04","slug":"pumpkin-pie","status":"publish","type":"post","link":"http:\/\/aysontespli.ca\/?p=605","title":{"rendered":"Pumpkin Pie"},"content":{"rendered":"<div>\n<div>\n<figure id=\"attachment_607\" aria-describedby=\"caption-attachment-607\" style=\"width: 246px\" class=\"wp-caption alignnone\"><\/dt>\n<\/dl>\n<\/div>\n<p>The Pumpkin Pie Recipe I have been using to don our Thanksgiving Table with for the past 30 years.<\/p>\n<div class=\"mceTemp\">\n<dl id=\"attachment_1414\" class=\"wp-caption alignnone\" style=\"width: 256px;\">\n<dt class=\"wp-caption-dt\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=1414\" rel=\"attachment wp-att-1414\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1414\" title=\"Pumpkin Pie\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/Pumpkin-Pie.jpg\" alt=\"\" width=\"246\" height=\"193\" \/><\/a><figcaption id=\"caption-attachment-607\" class=\"wp-caption-text\">Pumpkin Pie<\/figcaption><\/figure>\n<p>Pastry for 9&#8243; One Crust Pie<\/p>\n<p>Pumpkin Pie Filling:<br \/>\n2 eggs<br \/>\n1 can (16 ounces) pumpkin or 2 cups Cooked Pumpkin (following)<br \/>\n3\/4 cup sugar<br \/>\n1\/2 teaspoon salt<br \/>\n3\/4 tsp nutmeg<br \/>\n1 tsp cinnamon<br \/>\n1\/2 tsp ginger<br \/>\n1\/4 tsp cloves<br \/>\n1 2\/3 cups evaporated milk (pretty much 1 can&#8230;I don&#8217;t even measure anymore)<\/p>\n<p>Heat oven to 425Fdegrees<br \/>\nPrepare pastry.<br \/>\nBeat eggs slightly in med bowl.<br \/>\nAdd remaining ingredients and whisk all together.<br \/>\nPlace pastry lined pie plate on oven rack; pour in filling.<br \/>\nBake 15 minutes.<br \/>\nReduce oven temp to 350Fdegrees.<br \/>\nBake until knife inserted in center comes out clean, about 45 minutes.<br \/>\nCool<br \/>\nServe with Whipped Cream.<\/p>\n<p><strong>Cooked Pumpkin:<\/strong><br \/>\nHeat oven to 400Fdegrees<br \/>\nCut one small pumpkin (4 lbs) into halves; remove seeds and fiber. Place pumpkin cut sides up in oblong baking dish; pour water (1\/4&#8243;deep) into dish.<br \/>\nCover and bake until tender, about 1 hour. Scoop pumpkin from shells; mash until no lumps remain.<br \/>\nYield; About 4 cups mashed pumpkin<\/p>\n<p>Notes:<br \/>\nI am probably a lil more generous with the spices and of course I add vanilla.
