Sometimes I have a little bit of coffee left over in the morning; if it is dribs and drabs, I can shamelessly pour it down the drain or if I am in desperate need of a little caffeine hit, I might gulp it down cold! The other day, however, I had quite a bit of coffee left over and I just couldn’t throw it out; then I remembered this dessert we used to have from time to time, way back when!<\/p>\n

Saucy Mocha Pudding<\/strong><\/p>\n

 <\/p>\n

Preheat oven to 350F<\/p>\n

Combine in top of double boiler:
\n1\/4 cup Cocoa
\n1\/2 cup Brown Sugar
\n1\/2 cup Granulated Sugar<\/p>\n

Gradually stir in:
\n2 cups Hot Coffee
\nKeep hot, over simmering water.<\/p>\n<\/dl>\n<\/div>\n

Cake Batter<\/strong><\/p>\n

In small mixing bowl, combine and set aside.
\n1 cup Flour
\n1 1\/2 teaspoons Baking Powder
\n1\/4 teaspoon Salt
\nIn large mixing bowl cream together:
\n1\/3 cup Shortening
\n2 cups Granulated Sugar
\nAdd:
\n1 Egg
\n1 teaspoon Vanilla
\nBeat until light and fluffy.
\nAdd dry ingredients to creamed mixture alternately with-
\n1\/3 cup Milk
\n-beginning and ending with the dry ingredients.<\/p>\n

Beat for a couple of minutes, occasionally scraping down the sides of the bowl.
\nPlace an \u00a08inch Square pan that has been lightly sprayed with Vegetable Oil spray on a cookie sheet. Then\u00a0Scrape batter from bowl and spread evenly \u00a0into the baking dish.
\nPour Hot Mocha mixture over cake batter.
\nBake in 350F oven for 45 to 50 minutes.
\nServe while warm with fresh Whipped Cream or a scoop of Vanilla Ice Cream.<\/p>\n
