I often click on their suggestion and think &#8220;Ah, yea, that would be good!&#8221; But invariably I am missing some ingredient or another but tonight I had everything, and more, to come up with this version of Gardener&#8217;s Pie. (\u00a0<a title=\"Gardener's Pie\" href=\"http:\/\/www.canadianliving.com\/food\/quick_and_easy\/gardeners_pie.php\" target=\"_blank\">http:\/\/www.canadianliving.com\/food\/quick_and_easy\/gardeners_pie.php<\/a>)<\/p>\n<figure id=\"attachment_693\" aria-describedby=\"caption-attachment-693\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=693\" rel=\"attachment wp-att-693\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-693\" title=\"Gardener's Shepherd Pie\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4915-1024x574.jpg\" alt=\"Gardener's Shepherd Pie\" width=\"640\" height=\"358\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4915-1024x574.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4915-300x168.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-693\" class=\"wp-caption-text\">Comfort food extraordinaire for a cold Winter&#39;s night: Gardener&#39;s Shepherd Pie<\/figcaption><\/figure>\n<p>1 Tablespoon Olive Oil<br \/>\n1 Onion, chopped<br \/>\n2 cloves Garlic, minced<br \/>\n1 Carrot, grated<br \/>\n6 medium Mushrooms, sliced<br \/>\n1 1\/2 cups frozen Mixed Vegetables<br \/>\n1 Tablespoon dried Basil<br \/>\n1 pkg Yves Ground Round Original<br \/>\n2 Tablespoons Flour<br \/>\n1 cup Water<br \/>\n1 McCormick&#8217;s Vegetable Stock cube<br \/>\n2 Tablespoon Catalina Dressing (or 2 Tbsp Tomato Paste)<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Potato Topping<br \/>\n<\/span><\/strong>8 Potatoes, peeled and cut into chunks<br \/>\n1\/4 cup Milk<br \/>\n1 1\/2 Tablespoons Grated Parmesan Cheese<br \/>\n1\/4 cup Light Cream Cheese<br \/>\n2 Tablespoons Butter<\/p>\n<p>Preheat oven to 400F.<br \/>\nLightly spray a 9X13 casserole dish with vegetable oil spray; set aside.<\/p>\n<p>In medium saucepan cook the potatoes until tender; about 10 &#8211; 15 minutes depending on how small or large you cut your potatoes.<br \/>\nDrain potatoes and return to pot.<br \/>\nMash with milk and butter.<br \/>\nStir in parmesan cheese and cream cheese.<\/p>\n<p>While the potatoes are cooking, heat olive oil over medium-high heat in a large skillet.<br \/>\nCook onion for about 3 minutes; add garlic and continue cooking for another minute or so.<br \/>\nAdd grated carrot, basil, frozen mixed veggies and mushrooms.<br \/>\nSprinkle with flour and cook, stirring for 1 minute.<br \/>\nAdd water, Catalina Dressing and vegetable stock cube.<br \/>\nBring to a boil, stirring, for about 2 minutes.<br \/>\nReduce heat and continue simmering until the potatoes are ready.<\/p>\n<p>Once potatoes are ready to go, pour the &#8220;meat&#8221; mixture into prepared pan.<br \/>\nSpread mashed potatoes over top.<br \/>\nDot with scant dollops of butter.<br \/>\nBake in 400F oven until hot through, about 20 minutes.<br \/>\nServe with Salad and Crusty Rolls.<\/p>\n<p>Serves 6<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love that Canadian Living posts dinner ideas.
