This is quick and easy to throw together, tantalizes you as it simmers on the stove and rewards your taste buds when it is served up on a bed of fresh spinach and topped with a bit of shredded cheddar.<\/p>\n<p>I came across this recipe in Betty Crocker [New Cookbook] 8th Edition 1996, page 215, but found it lacking in flavour so changed it up a bit.<\/p>\n<figure id=\"attachment_738\" aria-describedby=\"caption-attachment-738\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=738\" rel=\"attachment wp-att-738\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-738\" title=\"Red Beans and Rice\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4989-1024x668.jpg\" alt=\"Red Beans and Rice\" width=\"640\" height=\"417\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4989-1024x668.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_4989-300x195.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-738\" class=\"wp-caption-text\">Red Beans and Rice<\/figcaption><\/figure>\n<p>1 Tablespoon Olive Oil<br \/>\n1 Onion, chopped<br \/>\n2 cloves Garlic, minced<br \/>\n1\/2 \u00a0each, chopped: Red Pepper, Green Pepper, Yellow Pepper<br \/>\n1 (425g) can Diced Tomatoes<br \/>\n2 cups Long Grain Rice<br \/>\n1 (425g) can Red Kidney Beans, drained and rinsed<br \/>\n1 1\/2 teaspoons ground Cumin<br \/>\n1 Tablespoon Oregano<br \/>\n1\/2 teaspoon Chili Flakes<br \/>\n1\/2 teaspoon Caynne<br \/>\n2 Tablespoons Lime Juice<br \/>\n1 teaspoon Salt<\/p>\n<p>Fresh Spinach<br \/>\nGrated Cheddar Cheese<br \/>\nFresh Cilantro, chopped<br \/>\nSalsa<\/p>\n<p>In large saucepan (with close fitting lid) heat oil and cook onion until soft and translucent; add garlic and continue cooking for a few minutes.<br \/>\nAdd chopped peppers, diced tomatoes, Kidney beans and rice and stir all together.<br \/>\nAdd enough water to measure 4 cups all up, including the liquid from the diced tomatoes &#8211; I usually add about 2 and a bit cans of water.<\/p>\n<p>Stir in cumin, oregano, chili flakes, cayenne, lime juice and salt.<br \/>\nHeat to boiling, stirring once or twice; reduce heat to low.<br \/>\nCover and simmer for 25 minutes.<br \/>\nDo not lift cover or stir.<br \/>\nRemove from heat and fluff with fork.<\/p>\n<p>Serve on a bed of fresh spinach, top with a bit of shredded cheddar and chopped cilantro; add a decent splash of salsa.<\/p>\n<p>Serves 8<br \/>\n&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes I just don&#8217;t feel like cooking but I am starving!
