I got the recipe from my mother in law quite a few years ago and make it twice a year: Luke&#8217;s birthday and Christmas. I think traditionally Luke would have it with custard but we don&#8217;t have that readily available at our grocery stores and I don&#8217;t make it well! I usually give it a light drizzle of plain icing but I think it needs a little something more&#8230;.will keep you posted on what I decide to top it with.<\/p>\n<figure id=\"attachment_813\" aria-describedby=\"caption-attachment-813\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=813\" rel=\"attachment wp-att-813\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-813\" title=\"Luke's boiled Fruitcake\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5332-1024x698.jpg\" alt=\"Luke's boiled Fruitcake\" width=\"640\" height=\"436\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5332-1024x698.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5332-300x204.jpg 300w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5332.jpg 2015w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-813\" class=\"wp-caption-text\">Luke&#39;s beloved Boiled Fruitcake - not just for Christmas!<\/figcaption><\/figure>\n<p>1\/2 lb (1 cup) Butter<br \/>\n1 cup Brown Sugar\u20281 lb (2 cups) Mixed Fruit: sultanas, raisins, currants, mixed peel, glace cherries, chopped<br \/>\n2 teaspoons Baking Soda<br \/>\n1 teaspoon Cinnamon<br \/>\n1\/4 teaspoon ground Cloves<br \/>\n1\/4 teaspoon Allspice<br \/>\n1\/2 teaspoon ground Nutmeg<br \/>\n2 teaspoons Vanilla<br \/>\n2 Tablespoons Bundy Rum or Capt Morgan&#8217;s Spiced Rum<br \/>\n1 teaspoon Instant Coffee Granules<br \/>\n1 cup Water<br \/>\n2 Eggs, well beaten<br \/>\n2 cups Flour<br \/>\n1 1\/2 teaspoons Baking Powder<br \/>\n1\/2 teaspoon Salt<\/p>\n<p>Combine from Butter to Water ingredients in medium size saucepan; bring to a boil then simmer for 10 minutes.<br \/>\nRemove from heat and cool.<br \/>\nMeanwhile, combine flour, baking powder and salt in small mixing bowl; set aside.<br \/>\nPrepare a 10&#8243; (25cm) springform pan by spraying with vegetable oil spray.<br \/>\nPreheat oven to 300F (150C)<br \/>\nWhen fruit mixture is cool, stir in eggs and dry ingredients, stirring until well combined.<br \/>\nPour batter into prepared pan and bake in moderate oven for 1 1\/2 hours.<br \/>\nRemove from oven and cool in pan, on wire rack for 30 minutes.<br \/>\nRemove sides from springform pan, slide cake off base to wire rack and cool completely.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>From whence this recipe originally comes from, I do not know.
