I do a lot of baking already so I don&#8217;t always want to make Rice Pudding. \u00a0Yes, sure, \u00a0Fried Rice is always an option but I don&#8217;t always have the rest of the ingredients that I would like to use on hand. Then I came across this idea on vegetarian.about.com and knew I had to try it! I didn&#8217;t follow the given recipe much but it gave me a great starting point and I went from there to create my own version of Rice and Bean Burritos.<\/p>\n<figure id=\"attachment_817\" aria-describedby=\"caption-attachment-817\" style=\"width: 640px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/aysontespli.ca\/?attachment_id=817\" rel=\"attachment wp-att-817\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-817\" title=\"Rice and Bean Burrito\" src=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5293-1024x768.jpg\" alt=\"Rice and Bean Burrito\" width=\"640\" height=\"480\" srcset=\"http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5293-1024x768.jpg 1024w, http:\/\/aysontespli.ca\/wp-content\/uploads\/IMG_5293-300x224.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-817\" class=\"wp-caption-text\">Rice and Bean Burrito - a spicy blend of flavours to liven up leftover rice!<\/figcaption><\/figure>\n<p>1-425gm can Black Beans, rinsed and drained<br \/>\n1 Tablespoon Olive Oil<br \/>\n1 Onion, chopped<br \/>\n2 teaspoons minced Garlic<br \/>\n1-425gm can Crushed Tomatoes or Tomato Sauce<br \/>\n1\/2 cup prepared Salsa<br \/>\n1 teaspoon ground Cumin<br \/>\n1 teaspoon Chili powder<br \/>\n1\/2 teaspoon ground Coriander<br \/>\n1 1\/2 teaspoon dried Oregano<br \/>\n1 teaspoon dried Basil<br \/>\n1 teaspoon Salt<br \/>\nPepper, to taste<br \/>\n1 3\/4 cup leftover Rice<br \/>\n1 cup shredded Cheddar Cheese<\/p>\n<p>6 &#8211; 8 Flour Tortillas<\/p>\n<p>In a large skillet, over med &#8211; high heat saute onion until soft; add minced garlic and continue cooking for a few minutes.<br \/>\nAdd tomato sauce, salsa and the spices; bring to a boil then reduce heat and simmer for 20 &#8211; 30 minutes.<br \/>\nStir in leftover rice and shredded cheddar, heat through.<br \/>\nHeat 3 tortillas in the microwave, on HIGH, for 45 seconds.<br \/>\nSpoon about a cup of the rice and bean mixture onto a single heated flour tortilla; wrap.<br \/>\nRepeat with remaining tortillas, heating tortillas, 3 at a time, in the microwave before filling and wrapping.<br \/>\nTop each tortilla with some shredded cheddar, a dollop of sour cream and serve on a bed of lettuce.<\/p>\n<p>*I made up 8 burritos, wrapped them in cello wrap then l-foil and put them in the freezer for ready to go lunches in a hurry.<\/p>\n<p>A variation of the recipe I found at:<br \/>\n<a href=\"http:\/\/vegetarian.about.com\/od\/maindishentreerecipes\/r\/beanriceburrito.htm\" target=\"_blank\">Rice and Bean Burrito<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes I end up with a lot of leftover rice.
