A basic cookie with a hint of something to make you go, “Hmmmm…..”
1 cup Butter, softened
1/2 cup Sugar
1 cup Brown Sugar, packed
2 Eggs, lightly beaten
2 teaspoons Vanilla
2 cups Flour
2 cups Quick Oats
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Salt
1 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/2 cup Coconut
2 cups Raisins
2 cups Raisins
Preheat oven to 350F.
Line baking trays with parchment paper.
In medium mixing bowl combine flour, rolled oats, baking soda, baking powder, salt, cinnamon, and nutmeg; set aside.
In large mixing bowl cream together butter, sugar and brown sugar; beat until light and fluffy.
Stir in eggs, one at a time.
Add vanilla.
Gradually stir in dry ingredients, stirring well after each addition.
Stir in Raisins.
Drop by heaped tablespoons onto prepared baking trays.
Flatten slightly.
Bake in 350F oven for 8 – 12 minutes, or until lightly golden.
Remove to wire racks and cool completely.
Store in airtight container.
Makes about 3 dozen large cookies.
